This place is fantastic! My only complaint is that it’s not right down the street... otherwise I’d be here every day. Chris was exactly what I was hoping for in a butcher: friendly, knowledgeable, and patient while helping me choose everything I needed (and a few things that I didnt need, but REALLY wanted!) I never felt rushed, and none of my questions were treated like they were silly or unwelcome.
My advice? Ask questions - they’ll have answers, and you’ll walk away knowing more than when you walked in. Need fresh ground meat because your wife became obsessed with tartare during a trip to Europe? They’ve got you, just call the day before and let 'em know. Craving A5 Japanese wagyu? Give them a couple days’ notice and it’ll be there waiting, fresh, not frozen. Always wanted a quarter cow but don’t have the freezer space? No worries, they’ve got a plan where you can pick up FRESH cuts over three months!
If they don’t have something in stock, they’ll order it. Want thin sliced ribeye for your tabletop Korean BBQ? No problem. Call ahead, and by the time you get there, it’s ready. This is the kind of place where you actually build a relationship with your butcher.

   Read moreI went in looking for a point-only brisket cut since a full brisket won't fit on my smoker and I like a well-marbled cut of beef. Sean greeted me and said he'd be happy to cut anything I'd like, but recommended I try smoking a tri point like I would a brisket instead.
I'm very glad I took his recommendation, because not only was it the perfect size, already trimmed and ready to season and smoke, it came out tasting exactly like a brisket in a fraction of the time, but with even marbling throughout that perfectly bridged the gap between the meaty texture of a flat cut and the juicy decadence of a point.
This is the first time in a long time I've gotten a free education alongside a product, and from someone who knows more about their craft than you'll ever learn on the internet. It's refreshing to do business with people who are genuinely passionate about what they do.
