If you ever find yourself in Hempstead Texas around lunch time and you like barbeque, stop by Killian's Taxidermy and Meat Market and I promise, YOU WILL NOT BE DISAPPOINTED! Unless you show up late, because there's a good chance there won't be any left. But you don't have to leave disappointed because they make their own sausage (and a big variety of sausage), beef jerky (good luck on the jerky though because they got a regular customer that buys them out, yes it is that good!), and boudin...Let me tell you about dat boudin yea! My 86 year old grandmother born and raised in Louisiana said it's the boudin she ever put in her mouth. Then there's the Meat Market with the best prices on choice meats that they will cut and package to order, and whatever you pick tell them to go ahead and hook it up with their "out of this world house seasoning" and you will never want to get your meat from a grocery...

The service here at Killian's is amazing and the woman who was the clerk was really cool at explaining what was available, what options/sides I might've wanted and etc,. The inside of the market is really clean and organized. So much so, that you can barely even smell meat. I got a brisket sandwich and mac and cheese, while I like for my brisket to have a little more fat rather than just lean meat, the sandwich was still pretty good, and the mac and cheese was similar to KFC's. I came in around 4:30pm so there was no one else in the shop, and I think this shop is all around cool. I would probably go earlier in the day to get the best quality of food. Out of this world Q. I love you bbq, I eat a lot of bbq, and I’m hooked on this place. Just had it the first time about 6 weeks ago and I go just about everyday when working nearby. My go-to is the regular sausage plate or sandwich in sweet sauce with double tater salad. Service is great. Place is clean.
