I know Chef Pablo offers a variety of options, but I wanted to say something particularly special to my pregnant wife with the occasion. Chef Pablo understood exactly what I was looking for and worked to bring both spectacular food and an unforgettable ambiance. We arrived to dinner with a fire in the fire pit by our table, candle light, and some art that I had given him delicately placed on the table. It was at once both inviting and sophisticated. We began with a rare cured ham with ripe cantaloupe and a dash of seasoning. Over the following courses we were treated to other traditional dishes with Chef Pablo accents, and also to novel dishes clearly created by him with inspiration. The dishes had a perfect blend of intensity that ranged from light and delicate (e.g., a gazpacho-inspired pallet-cleansing sorbet) to rich decadence (e.g., a Chef Pablo-cured, confit, and seared pork belly seasoned and cooked in a way only he can replicate). Over the next four hours my wife and I talked, laughed, and slowly partook of Chef Pablo’s unforgettable creations. It was a night to remember. I recently hired Pablo to cook a feast for a family gathering. Pablo happens to be a distant cousin, but more importantly he is an extraordinary chef! He prepared an Argentine style "asado" (bbq) complete with delicious appetizers (empanadas, cheese melted on the grill with grill toasted sourdough bread, homemade chorizo,) perfectly cooked meats (steak, pork and the absolutely most delicious slow-roasted chicken you'll ever have,) and lots of side salads to accompany. It was absolutely amazing, and I am so glad we worked with him, instead of cooking ourselves. We got to enjoy the party, and the food was 1000 times better than anything we would have come up with. Perfection.

And.... as a wedding officiant who has seen loads of wedding day spreads, I think Pablo would be perfect for elopements and smaller weddings. Our gathering was on the small side, and watching Pablo cook over open fire and hot coals became part of the fun of the party. My friend threw me a baby sprinkle yesterday and Chef Pablo catered it with a gorgeous family style Spanish tapas spread. The food was delicious—and there was something for everyone. We had guests with different dietary restrictions -some were dairy free, gluten free and vegetarian and they all raved about how good the food was! My son who is six years old and picky gave it 5 stars— especially the meatballs! After we had gone back for seconds, we invited one of the husbands to make themselves a plate and he said “so this is what you ladies having been doing for the past few hours, this food is amazing!”
