Zavotski Custom Meat & Deli, 2600 W. Sylvania, inspected Jan. 30. The person-in-charge did not ensure employees cook food to proper temperatures or check with food thermometers. Employees were not properly trained in food safety, including allergy awareness. The person-in-charge could not state safe cooking temperatures and times or explain the relationship between safe food temperatures and prevention of foodborne illness. The person-in-charge could not explain correct procedures for cleaning and sanitizing or how to comply with a hazardous analyst critical control point plan. The person-in-charge did not ensure employees cool foods properly. A large rack blocked access to the hand-washing sink in the menās restroom. Raw shell eggs were stored improperly above ready-to-eat foods in the back cooler by the deli line. Foods in the walk-in freezer lacked covers and were exposed to multiple condensate leaks and frost buildup in the freezer. Loose green onions and mushrooms were stored improperly in a container that held other foods in packaging. The meat grinder had rough/āsplit welds and the cheese slicer had exposed screw heads, with food debris embedded in recessed areas of both. The backroom prep table by the smoker and the reduced-oxygen packaging machine were dirty with food debris. Employees were instructed improperly that the deliās cheese and meat slicers need thorough cleaning only at the end of the day, rather than at least every four hours. The chicken marinade tumbler gasket was dirty with a mold-like substance and food debris. The can openerās piercing blade was dirty with food and debris buildup. A weld on the large Hobart mixer was rough and had old dried meat in the welded area. The meat-cutting table and its cutting boards were dirty. Whole meat roast was being cooked improperly, with 130-degree internal temperature not held for the required 112 minutes. Production sheets were missing or had incomplete information for logging proper cooling of roast beef, corned beef, and pastrami. House-made marinade stored in the meat-cutting room was too warm and had no date mark. Deviled-egg/āpotato salad was date-marked improperly. Open cheese in the deli case, including low-moisture mozzarella, Muenster with peppers, and hot pepper jack, lacked required date marks. A large jug of a chemical marked āCausticā had no other labeling and was stored improperly in a storage trailer with equipment and single-use items. Corned beef in reduced-oxygen packaging was not labeled properly. Reduced-oxygen packaging was used for Havarti cheese without proper documentation. A proper training plan for employees was not included in the hazardous analyst critical control point plan for use of reduced-oxygen packaging. In-house packaged foods lacked required allergen declarations with their labeling. Meat trays and containers were cracked, broken, and split. House-made marinade was stored in hollow-handled jugs that cannot be cleaned thoroughly. The sausage-making cart had a large, rough bead of caulk applied that could not be kept clean.
