I usually get my venison processed farther north, but last season I was only 30 minutes away from Waunakee when I harvested a 200lb white tail. Going out on a limb to try something new, Fred's was open a little longer hours than other processors. I called in and immediately was impressed by the phone service and information. Brought the harvest in to be processed and Jeremy was very prompt and friendly (not a a common characteristic these days). Had my venison processed in all sorts of ways (burger, steaks, roasts, landjaeger, smoked logs, summer sausage) and because of the size of the harvest I was able to request a isolated batch with only my harvest which I prefer.
Timing was not bad. Sent glands in for testing and upon a clean test, Fred's was able to turn the venison around in about 2 months.
Pickup was easy. The venison is delicious. Best summer sausage recipe I've had yet. Not too seasoned and yet not bland. Just right to allow for easy enjoyment. I've been eating a lot of it because it's so good and not over seasoned. There are not a lot of flavor varieties for sticks but I don't mind at all. They are good how they are!

Read moreI usually get my venison processed at a different shop, but gave Fred's a try as they were open when returning to town the Sunday of opening weekend. Will never take a deer there again. I requested the most basic processing - just roasts and trim. I like roasts kept whole so I can cut my own steaks and chops before cooking to limit freezer burn. Instead of separating and leaving the major muscles intact (bottom round, top round, sirloin, eye of round), they took a saw and cut each leg into 5 pieces. So I got 10 "roasts" that consist of a section of femur with a chunk of each muscle attached. Extremely frustrating, and of course there is no remedy. I also request they quarter my backstraps before packaging, and they left them whole. The only thing good I can say is that they were fast - but I guess if you butcher deer with a saw it doesn't...
Read moreThe meat may be good but I do think customer service is a big part of owning a mom and pop meat market or ANY store for that matter. I came across a gentleman there, from what I believe he was the owner or manger. Seemed to bring everyone down and was not in a very good mood. Scowling and mumbling profanities under his breath. Made me very uneasy that he was quite rude, it is unfortunate because the quality was up to par. It is my understanding that this is the longest running business in Waunakee which is great but understand customer service is now the utmost important thing today.
