Canberra: for the best Pho on the Southside, I really recommend Em Mai at the Fyshwick Fresh Food Market. It’s in the new section down one of the side lanes - next to Lifeline Bookshop. The Pho is inspired by the north of Vietnam and is so much better than the south (IMHO). Also available via Uber Eats from Sunday to Wednesday. If you're avoiding refined carbs like rice noodles, you can ask for extra greens in lieu - nothing's a problem. Their rice paper rolls are amazing, too. And beautiful, handy packaging when taking away. The Pho stock is sealed in a Cryovac bag. No spills on the way home. Beautiful family-run business....
