*updated for spicy inferno festival flavours* Best ramen in Perth in my opinion! Broth has great flavour no matter what you choose, and the noodles taste like they are cooked in broth so they have great flavour too. So filling every time, and the best katsu chicken I've ever had!!! Only problem is that because they're so popular, you feel like you're being rushed out of the place as soon as you're done. Tonyu Basil update: green basil ramen was ok, chicken meat was a bit too chewy but it was definitely an interesting light and refreshing broth taste! Very much enjoyed the king mushrooms on top. Have returned to redeem my free toppings and gyoza with level 2 godfire, it seriously hit the spot and all the flavours were perfectđŸ€€ free ramen soon!! Tanrei 2 umakara men: I got level 2 spicy (I think you can choose up to level 4, same levels as god fire) it was good as an alternative spicy flavour with a good amount of soft cabbage, bean sprouts and soft egg. wantan men: dumplings had a nice soft wrapping with lovely plain broth! Hiyashi Tan Tan Men: Chilled broth with beautiful noodle texture and great salty broth flavour! tantanmen can be spicy but this is only mildly spicy. spicy series update! I enjoy spicy food but still found the first two flavours a very challenging level of spice!! yuzu miso was a sour spicy, the curry ramen was my favourite with a great flavour and the curry powder coated karaage chicken was really yummy, and had a good amount of vegetables in it too. we were given stickers for trying the ramen challenge, but there's no way I'm going to try the final spicy level since the first two were already quite a struggle😂 I would not recommend unless you like VERY spicy!! I would definitely order the curry ramen again if it was less spicy!

Waited about half an hour for a table and another ten minutes for food to arrive, 30 minutes for the tsukemen to arrive. The place was bustling with a line almost up until close. The mini ramen set was honestly divine - it’s a definite recommendation with four different dishes that are all perfection. There’s a mini tonkotsu ramen that has the classic taste, I would’ve preferred more soup and less noodles though. The pork was tender and flavourful. Then you have a choice of side - I got the mini gyoza, which also taste the same as the normal one, delicious. What’s new is an egg mayo which was fine, but then your choice of two types of onigiri. I got the unagi and mentaiko, and again both were made to perfection. The rice was warm and paired amazingly with the crunchy seaweed and pickles. The tsukemen broth was mouth wateringly tasty (it might actually have been the best soup I’ve ever tasted), and the pork was melt in your mouth tender. No wonder everyone was ordering it - worth every minute that we waited for it. I did notice though that the prices have been jacked up quite a bit since the last time we came. Overall, delicious! Am definitely coming back for the mini ramen set and/or tsukemen. If you’re willing to wait and are an avid ramen lover, this place is for you!

Waited in line at 12:35, we got in at 2:13. Staff for line was not attentive, we saw people leaving but had to wait 5-10 mins for staff to come out and address people. Karaage is a ball of chicken... Was so peppery, and destroyed my appetite. Gyoza was ok, but seemed like our batch was overcooked as the after taste was burnt pastry. The onsen rice bowl was pretty tasteless or a straight taste of Nori. The spicy Ramen (2) was horrible, was super bitter and was similar to putting a mouthful of chilli powder in your mouth. Can feel the grains in your mouth even gave it a big stir to make sure it hadn't all risen to the top but it could not be salvaged. No taste of their tonkotsu broth to be found. Their signature tonkotsu was actually alright with noodles. By itself say you were to just drink it, It's pretty salty. Hurts the throat after a few slurps so be weary of this if you're not into rich hearty broths. Menma was pretty good, their flavoured egg was not flavoured. It just tastes like a standard soft boiled egg. The big miss is the chashu, my lord it's bad. It just tastes like a pork roast you could buy at Cole's or make yourself. The fact that I can associate this with a range of other slices of pork does not rate highly with me.

Ah, Hakata Gensuke - Ramen Professional! The name itself conjures up images of steaming bowls of ramen, rich broth, and perfectly cooked noodles. But this restaurant isn't just about satisfying your hunger; it's a full-blown sensory experience that transports you straight to the heart of Hakata, Japan. Imagine stepping into a warmly lit restaurant, the air thick with the intoxicating aroma of simmering pork broth. The friendly staff greets you with a smile, and you can't help but notice the bustling energy as other ramen enthusiasts slurp down their noodles with gusto. It's an atmosphere that's both inviting and invigorating. Hakata Gensuke's claim to fame is their tonkotsu broth: a rich, flavorful concoction simmered for over 24 hours with pork bones. This dedication to slow cooking results in a broth that's bursting with umami, the savory essence that forms the heart and soul of Japanese cuisine. But Hakata Gensuke doesn't stop at the broth. They take pride in their homemade noodles, crafted to the perfect thickness and texture. Each bite is a delightful dance between the springy noodles and the rich broth. Toppings like melt-in-your-mouth chashu pork, marinated bamboo shoots, and fresh spring onions add another layer of flavor and texture to this culinary masterpiece. The beauty of Hakata Gensuke is its dedication to authenticity. They don't try to reinvent the wheel; they focus on perfecting the art of traditional Hakata-style ramen. It's a testament to the power of simplicity and the importance of using high-quality ingredients. Here are some additional details that make Hakata Gensuke a must-visit: Over 20 Amazing Flavors: They offer a variety of ramen options, from the classic tonkotsu to vegetarian and spicy variations. There's something to tantalize every taste bud. Fresh and Delicious Toppings: All toppings are fresh, traditional, and you can always ask for more! They understand that the perfect ramen bowl is all about customization. 100% Slurp-worthy: In Japanese culture, slurping your ramen is not considered rude, but rather a sign of appreciation for the delicious flavors. So, go ahead, slurp with gusto! It's part of the Hakata Gensuke experience. Hakata Gensuke isn't just a restaurant; it's a portal to the heart of Japan. It's a place where tradition meets flavor, and every bowl of ramen tells a story. So, grab your chopsticks and get ready for a...

Not a huge fan of ramen, but I really liked how this restaurant has modernised itself over the years.

Originally when this restaurant opened to the public, it was very overhyped and had people crowing outside for long periods of time, so I waited months for the hype to die down before eating here.

I typically don't like ramen because of the strong flavours in the soup and also the noodles. I like my udon or larger noodles more, but what Hakata Gensuke (HG) does well is that provides the option for customers to customise their meal, such as selecting the intensity of the broth and also the type/texture of the noodles used. The flavour then becomes more bearable for me and allows me to enjoy drinking the soup more.

What this restaurant has modernised in as well is the introduction of QR codes to ordering your mean online. Doing this avoids the human interaction with the staff to make your order, and also reduces the likelihood of the wrong order being made. If you order a drink, they will quickly bring out the drink after the order has been processed.

Cost-wise, the restaurant is still a franchise, so you may pay a premium for the dish, and for the cost of the meal, you can get other similar or better ramen dishes elsewhere for less, but the experience will not be as good what HG provides.

Once you have finished your meal, the staff will greet your farewell, and they will clean up your table in a timely manner, allowing the space available for the next...
