Some girlfriends & I decided to go for a wander down Springvale Rd after dinner, & came upon BINGSOO DESSERTS SPRINGVALE. After a big evening meal, we were pleased to discover they offered a "Baby Bingsoo" serving size & ended up trying 2 from the Specials Menu (Mango Passionfruit Bingsoo & Choco Strawberry Bingsoo) & the Matcha Mango with Matcha Ice Cream from their Regular Menu. Each one was deliciously presented & had its own unique flavour profile, so it was great to be able to try the 3 different flavours 👌
I chose the Matcha Mango Bingsoo with Matcha Ice Cream - the different layers & textures worked really well & every element within the dessert was soooo flavourful without being too sweet (NB. I decided to skip drizzling condensed milk over the dessert, but it can be added for more sweetness). Bingsoo Desserts Springvale has been my favourite bingsoo that I have had in Melbourne, so far! 😍
In addition to the great menu, the servers were so warm & friendly (extra special mention for Charlene). We also finished the night off with some unadulterated fun on their Claw Machine, before leaving 🥳️
SOME THINGS TO CONSIDER: The acoustics can make it a little loud with a full-house, but that seems to add to the energy of the atmosphere. Also, the bench seats are a little too high for the tables, which makes it an awkward height to lean over the table to eat (especially, if you're tall 🥴️) - the standalone chairs are a lot more comfortable.

Choco Strawberry Bingsoo Rich, chocolatey goodness paired with sweet, juicy strawberries – this one was pure comfort in a bowl. The shaved ice was super fluffy and absorbed all that chocolaty drizzle and creamy condensed milk. The chocolate crumble topping added a nice crunch, and the fresh strawberries balanced the richness perfectly. If you’re a chocoholic, this is your dream dessert.
Mango Passionfruit Bingsoo This one was like summer in every bite. The mango was fresh and juicy, and the passionfruit added a bright, tangy twist that made it super refreshing. It had a tropical vibe, and I loved how the sour-sweet passionfruit balanced the smooth mango syrup. Light, fruity, and perfect on a warm day.
Matcha Mango Bingsoo Surprisingly addictive! The earthy bitterness of the matcha paired really well with the sweet and juicy mango chunks. It was a more sophisticated combo, not too sweet but still really satisfying. Definitely a great option for matcha fans looking for something a little different.
