Paninoteca S.p.A is an institution of the north, clearly loved by the locals. They have been pumping out fresh panini’s daily since 2016, with majority of their ingredients made in house. Their concept and inspiration comes from their Sicilian heritage which speaks volumes through their food. What sets them apart from other sandwich shops is their grilled meats - kangaroo, sausage, scotch fillet, pork belly! There’s over 20 panini’s to choose from as well as a secret menu! They’ve also got snacks like homemade arancini and Italo-inspired chips. And they haven’t forgotten about the vegetarian and GF folk out there.
The Sausage panini (with marinated peppers & mayo) was delicious, lots of filling and super soft bread. You can’t go wrong with a combo like pork and fennel. I added Buffalo Mozzarella as recommended by the co-owner and it was a great decision. My only peeve was how messy it was to eat because of all the sauces and juices oozing out.
The Prosciutto panini (with pesto, buffalo mozzarella, tomato & basil) was also super tasty, really fresh ingredients and the pesto in particular was wonderful. It was simple but effective and did the job. Sometimes less is more 👌🏼
Their hand cut chips with grated Pecorino cheese are so so good. Crunchy, crispy, seasoned to the gods. And that cheese is a perfect combo with their special seasoning.

Most recipes are in-house made and come passed down from their mamma except the Kangaroo which was a rich and contemporary twist to the Sicilian panino con carne di carvali (horse meat) and a must try (especially with added red onion and buffalo mozzarella - it was so good!).
The Avocado With Egg & Bacon was as good for lunch as it would be for breakfast! And don't forget to get a side of their chili oil which will blow your mind both in spice and taste!
Be sure to hack your shallow fried Chicken Cotoletta With Prosciutto proving any combination makes for a superior sando! And The Grosso Guy is another heavy hitter having stood the test of time loaded With all the best cuts of meat.
Their chips have unfortunately had to change no thanks to a lack of supply but I won't hold it against them even if I was saddened to see them go!

Inspired from their Sicilian heritage, they’re bringing the traditional street food to Melbourne using fresh produce that’s been locally sourced. The paninis are made with a variety of fillings to choose from and the ciabatta bread makes it such a pleasure to eat. My favourite had to be the Grosso guy which was stuffed with scotch fillet, pork&fennel sausage, smoked pancetta, pork belly and melted caciocavallo cheese. One bite into it, and you knew you were in for some real meat action. The marinated olives, a family treasured recipe is another delight! Also big mention to their hand cut chips that comes either plain or loaded. I absolutely loved it with the pecorino cheese.
What I loved most about this place is how they stay true to what they stand for. Italian street food can be so overrated but they do such a fine job. They are affordable but don’t compromise on taste or quality. Highly recommend...
