Pho Hung Vuong Saigon Springvale is one of Melbourne's highest-rated restaurants - for good reason. It is the sister shop of Pho Hung Vuong Saigon in Footscray (owned by the same family). This restaurant is famous for one thing: pho - a traditional Vietnamese soup.
The shop fittings are nothing particularly fancy. There are mirrors on opposite walls (a common Vietnamese restaurant-style decoration to make the room look bigger) and a reasonably good number of tables to be seated at. Service is prompt and straight to the point: the job of the wait staff is to get your order correct. Don’t expect smiles or for the staff to ask how your food is. If you are looking for that sort of experience, you are barking up the wrong tree.
Pho Hung Vuong Saigon Springvale does not mess around with its food options – there is only one item on the menu: pho. The only difference between the dishes is the choice of topping, which ranges from the traditional beef slices to funkier options like tendons or tripe. Chicken is also available if beef is not your thing. There are no entrees like spring rolls or rice paper rolls. (Special beverages are still available) Pho is what this restaurant does and it does it outstandingly.
Pho Hung Vuong Saigon Springvale is generous with its portions. There is a hearty amount of rice noodles and a solid quantity of meat served with each bowl of pho. The broth is, of course, the champion of the dish. Real, traditional pho takes hours to prepare. The final product is a broth that is clear and free of scum and supremely flavourful. It is an art form that Pho Hung Vuong Saigon Springvale has found the perfect formula for. When I look at the clarity of the broth in this restaurant, my heart pounds in sheer admiration. Each spoonful to my lips is a delight and leaves me rolling my eyes in pleasure.
The food in this restaurant is well worth every dollar. Speaking of dollars, make sure you bring cash here because electronic payments are not accepted at all.

On Wed 26 May approx 7pm I ordered pho 3 separate times because every time I discovered human hair in the pho. First time was strands of hair, second time was a bunch of hair (like clippings), third time was one long strand. I’m careful to check the food as I’m pregnant and I was discarding the spring onions. The restaurant was apologetic every time but I was insulted that they accused me of having a haircut prior to arriving or somehow was my fault (I haven’t had a haircut in 6 wks). Further, two of the kitchen ladies “coincidentally” went to the toilet after the last two times I raised issue, and when they returned they were intently staring at my head (corridor to toilet is behind me), suggesting I was to blame. I felt they didn’t take any responsibility at all and I lost my appetite. My husband went to pay for his meal and I asked if a modest discount was forthcoming to make up for the inconvenience (I’m pregnant and hungry). The waiter went to ask the “bosses”. Four kitchen ladies (presumably the “bosses”) came out and to my shock NONE were wearing hair nets. There wasn’t even the pretence they were wearing hair nets. One lady showed us the two served bowls that had hair, insinuating that we must pay - they didn’t even discard the bowls and it’s not inconceivable they would serve those bowls to the next unsuspecting customers. All ladies (waitresses & kitchen staff/bosses) were adamant we pay full price for my husband’s meal all while saying in Vietnamese for me to keep it discrete (so as not to scare the patrons). That’s ok with me, I was only asking for some recompense for the inconvenience. My husband paid full price for his meal and we warned the other patrons to check for hair in their food when leaving. Beefy and rich. I ordered a large but it is not really a large, more noodles same amount of meat as a medium. I am on intermittent fasting so this was my one meal a day, expecting springy noodles but got broken soft gooey strands of carbs. Three thinly slice pieces of rare beef and a minuscule quarter piece of beef ball. When you order the special, it must contain all the essential meats. Along with the bowl wree two fragile sprigs of mint and some discoloured bean sprouts. No cues outside today. Was very disappointed. $14 for broth. I could have bought instant pho and extra fresh noodles from market opposite and gotten better noodles. Would not come back again until I forget how terrible the noodles and portions are. Should have gone down the street to nam giao and ordered spicy bun bo. Waste of tummy space and one meal a day. That's my two cents on the flavour and beef noodles soup. Hopefully you bowl will be satisfying. I did have a thirsty bout after this bowl because of the amount of msg in it. This store would be one of the better ones around springvale shopping district because other places have watered down beef stock with loads of msg.
