Dulcie’s, simply put, is lovely. It feels like you’re visiting your eccentric uncle’s house who has curated aesthetic tastes and appetites from traveling the world for decades. The wild part is that every spirit served on the menu is Australian. It’s a truly unique place to drink in Sydney. The vibes are easy and the owner was as charming as he was handsome. The espresso martini has an imaginative twist to it, making it something worth trying if that’s a profile you think you’ve exhausted. As a non-vodka drinker, I was pleasantly surprised by the flavor of the house-crafted pavlova flavored vodka. Only a shot for me though; it’s a rich taste and a bit sweeter than I normally drink. The Cosmo Quandong is also an inventive and well-crafted cocktail featuring not only Australian liquors (like everything else on the menu) but also other flavors only native to Australia. It’s a lovely place to drink. I can’t wait to go back.

Instead, I found cocktails so good I almost started tipping the bartender just for existing. Staff: Sooooo friendly. Like, ā€œadopt-you-into-their-familyā€ friendly. I half expected to leave with a Tupperware container of leftovers. Drinks: Absolute weapons. One sip and I was ready to write poetry about citrus. Stage: There is a stage. No show though. Honestly, if someone had jumped up with a saxophone or even a shock puppet, I wouldn’t have blinked. Clientele: Ran into an unnamed politician. Can’t say who, but let’s just say their drink order was more scandalous than their voting record. Final verdict: Not a strip club, but I’d happily get stripped of my money here again.

Clean and fresh martinis or punchy, dark spirits, there's something for everyone here šŸøšŸ„ƒ They use Australian ingredients wherever possible, which is a nice change and great opportunity to explore drinks and additives you might not have come across before šŸ’ Staff are very friendly and accommodating, will help guide your decision without pretentiousness if you're not sure what you're after. Will drop in again, for sure šŸ‘

I’ve done three of the cocktail masterclasses at Dulcie’s and they’re truly unmatched šŸ™Œ They’re great value for money and the cocktails are delicious. Today I did the ā€˜The Sydney Favourites’ masterclass, featuring local spirits like Poor Tom’s Gin from Marrickville and Brix White Cane Spirit from Surry Hills. I was impressed with the quality and creativity of the cocktails, combining uniquely Australian flavours like eucalyptus with classic cocktails like a 20th Century. The staff were absolutely incredible. They were knowledgeable and friendly. The owner, Brandy, is charismatic and welcoming. One of the bartenders, Nick, is a genius when it comes to putting a spin on classic cocktails. His take on an espresso martini (from the ā€œStir’dā€ menu) is hands down the best, most decadent espresso martini I’ve ever had. It’s like if a tiramisu and an espresso martini had a baby and baptised it in coconut. He mentioned that he’ll be managing a new bar called ā€œStir’dā€ on Kent St, opening later this year. So happy that this place is open again after Xmas holidays, and absolutely delighted they’re weathering the new Covid restrictions: they seem to be one of the few places that actually try to comply with the new laws and save themselves, and their customers, hefty fines.

I’ve got to admit I’m biased as it’s one of my favourite bars in Sydney: friendly, professional service by people that actually know about the products they serve (without being pretentious!), in a space that I feel immediately relaxed in ... get one of the staff to tell you about what the place USED to be 😳, it’s Kings Cross after all lol.

But it’s a cocktail bar first and foremost, and these guys really know what they’re doing ... and that everything they serve is Australian makes for some really new and enjoyable experiences.

It’s the only thing my GP and I fight about; she says I spend too much time there ... but I think she just wants my usual seat on the red velvet couch by the stage hehe
