Best cafe in Waterloo, and a strong contender for best in Sydney. Excellent range of specialty coffee selections. In addition to espresso beverages, they serve to cold brew, batch brew and V60 Filter. I’ve never had a bad cup of coffee here, and I’ve tried practically the entire coffee menu.

They also do excellent juices and milkshakes for those non-caffeine heads.

Their food selection is remarkably strong too. They have seasonal specials (check out the Yuzu Benedict, served with tempura prawns and roe!).

My personal favourite is the brekkie stack, which is bacon, halloumi, fried egg, smashed avo, grilled tomatoes and rocket on a generous patty of deliciously crispy potato rosti.

Their pastries are also delicious and a great treat after a big breakfast or brunch. Their pistachio croissant is my go-to, but everything is good.

It’s rare to find a cafe which hits on all fronts, but this is truly a 5 star experience. The staff are also exceptionally friendly, and service is fast! Nothing but love for this absolute blessing to the Sydney cafe scene.

Update August 2023: Just had one of their daily specials, Spicy Pork Belly on Toast. It was one of the finest breakfast items I’ve had. Noble continues to be the finest Asian-fusion breakfast spot that’s still so reasonably priced for such quality. I hope it becomes a regular menu item! I would recommend it to all my friends who...

Noble Roasters is the revamped version of Project 2 Waterloo. Whilst that was a good shop, this has taken up the occupancy of the shop next door as well, converting it to very large space. It has dark and industrial feel to it, and an expansive coffee bar showcasing the coffee equipment. They do a lot of roasting, some in store and some off site.

The store is all about the coffee with plenty of brewing options including single origin filter coffee, nitro, and v60. In addition, they have great milk based coffees, served in beautiful ceramic cups, and also flavoured lattes. We tried a coffee flight; with a latte, batch brew and espresso.

If you’re not into your coffee, plenty of other options are available including chai and beautifully brewed teas.

Now they’re a larger store with longer opening hours, they have breakfast and lunch menus. From eggs Benedict, granola, chia pudding, mushrooms on toast, scrumpets (or sourdough crumpets), salads and even oysters, it is an extensive and quite sophisticated menu. We tried their baked eggs, packed with flavour and served with two slices of sourdough toast, making for a decent portion.

You can buy in-house baked muffins and cookies as well...

Such lovely food I had the Spinach omelette and prawn on toast and added extra halloumi prawns were exceptional, but felt the whole dish needed some salt or just something to make it 'pop'. Huge portion I couldn't finish it! (I've found that in Australia though, brunch portions are massive!) the red velvet latte was beautiful, which the milk was served much hotter though. I took away two also huge pastries, had one the next morning and was still beautiful! The may ha French toast was out of stock when I arrived not long before closing so I'd suggest if you want that, go earlier than I did! I'd definitely go back if I come back to Sydney, the staff were great too.

I found them on Google but found they don't do the pistachio crossaint or crossaint eggs benedict/dishes anymore so probably god to update Google with this! Can't wait to try their French...
