While on my holiday in Mt Beauty, I found gold! I had run out of coffee beans and after doing a quick search online to find where I might get quality beans, I learned there was a coffee roaster right in town (Honeybird). I drove up to their shop and wow, it was a delightful experience. I had a great time chatting with the barista learning about what they offer. She asked what I liked and then made a shot of the Velvett Assassin saying it would be most similar to what I am accustomed. She was spot on, so I bought a kilo bag. Not only that, they offer chocolate covered coffee beans, which meant I could score more points with my wife who is a lover of both chocolate and coffee. Then I perused the wall behind me to find they provide tons of coffee and brewing equipment. And sure enough, they had something I had been looking for for a long time, a naked portafilter for my espresso machine. Adam, their coffee machine mechanic, set me up with everything I needed and talked me through how it was going to work. I have been buying whole coffee beans over the internet for more than 25 years (since I discovered that the secret to good espresso is to buy a good grinder). The second secret is to find freshly roasted arabica beans. I prefer to start with premium beans (ethically sourced) since poor roasting and handling can degrade coffee, but good handling cannot improve poor beans to start with. And if the growers cannot afford to reinvest in their farms, then you do not have a sustainable supply... I think that I have spoilt my family, as their palates now reject instant muck but they are not prepared to operate the espresso machine (or even learn to do a pour-over) when I am not around.
