Mortier puts cooking at the center. I personally find this incredibly refreshing in a time when form too often takes priority to substance. This is not to say that what meets the eye isn't appealing. Rather, it means that the eye can focus on the food. The mouth can focus on the food. On the small but convincing wine selection. On taste. This philosophy is exemplified by the bare gray walls and simple but functional style. Don't be put off, simply decor isn't there to be the main character. And yet the warm welcome by the smiling staff, the glimpse of the chef rattling the pans in the back, reminds you that it isn't decor that makes a place warm and welcoming. The staff were nice but when you have to wait 15min until you get to order (or even get noticed) it’s not the best start :) it was a bit busy, and they felt a bit stressed, which is ok of course, but it didn’t make the best experience.
