Food was fantastic - the pairings and presentation were cheerful and new. Decor was bohemian and simple. I opted for the 6th course of lamb shoulder and oh my god, that blew me away. The rest were good but damn, that lamb literally knocked me back at first bite. I also went with the wine pairings which were well done and the description/knowledge of the sommelier was great. Some slight improvements- I sat at the bar and the stools were very uncomfortable for the 2 hour duration of dinner. Also, I had a few questions regarding the meals and sometimes the staff was unsure of the ingredients- not a big deal but most staffs at restaurants of this caliber are usually a little bit knowledgeable. Overall a great meal and would recommend

Great ambiance, the guys and girls serving us really knew their stuff. The cocktail menu is a bit limited but they tasted great. So quality over quantity but that suits me just fine! We had a table by the window and we had a good view over the bar and the open kitchen. You could notice the people here really pulled together as a team and are passionate about the food they're serving. As you can see by the photo's the food looks incredible, taste the same! Definetly a place to visit if you're in Ghent and pride yourself on being a foodie!

ALGEMENE ERVARING In april brachten we een bezoekje aan Publiek. Het werd een fantastische culinaire ervaring in een meer dan aangenaam kader, waarbij elk gerecht zorgvuldig was samengesteld en met vakmanschap was bereid. De aanpassingen voor dieetbeperkingen werden nauwgezet opgevolgd, wat getuigt van een attent en professioneel niveau van service. De combinatie van natuurwijnen met elk gerecht versterkte de smaakervaring en voegde een extra dimensie toe aan de maaltijd. De bediening was vlot, vriendelijk en attent, waardoor het hele diner voor een toffe en onvergetelijke avond zorgde.

Om in detail te gaan, bespreek ik graag gerecht per gerecht van de 7-gangenmenu (met dieetaanpassingen) van die dag.

DE STARTERS Tartelette rode kool: Een verrassende introductie met een knapperige textuur en een harmonieuze balans tussen zoet en zuur. De rode kool vormde een smaakvolle basis, versterkt door de subtiele aroma's van de tartelette.

Groenten jerky: Een interessante vegetarische twist op een klassieke snack. De gedroogde groenten boden zorgden voor een subtiele knapperigheid, waarbij de natuurlijke smaken goed behouden bleven.

Rode bieten carpaccio: Een verfijnd gerecht dat speelde met texturen en smaken. De delicate plakjes rode biet werden versterkt door de toevoeging van een lichte dressing en een knapperige topping.

Komkommer met mossel: Een gedurfde combinatie die verrassend goed werkte. De frisheid van de komkommer werd verrijkt door de zilte smaak van de mossel, waardoor een harmonieus contrast ontstond.

Hele, gele biet: Een eenvoudig gerecht met een prachtige presentatie. De gele biet was perfect gegaard, waardoor de natuurlijke zoetheid tot zijn recht kwam. De toevoeging van enkele subtiele kruiden zorgde voor een gebalanceerde smaak.

DE HOOFDGERECHTEN Zalmforel, koolrabi, dille: Een verfijnde combinatie van zachte vis, knapperige groenten en aromatische kruiden. De zalmforel was perfect bereid en harmonieerde ideaal met de frisse tonen van koolrabi en dille.

Coquille in 't groen met champignon: Een heerlijk gerecht dat de delicate smaak van de coquille perfect combineerde met de aardse tonen van (in de mond smeltende) champignons. De saus voegde een extra diepte toe aan het gerecht.

Jonge spinazie, brandade en pompoenpit: Een smaakvol vegetarisch gerecht met een rijke textuur en diepe smaken. De romige brandade en knapperige pompoenpitten vormden een perfecte aanvulling op de verse spinazie, waardoor een goed uitgebalanceerd gerechtje ontstond.

Kabeljauw met wortel en boekweit: Een eenvoudig gerecht dat uitblonk in zijn uitvoering. De kabeljauw was boterzacht en smaakvol, terwijl de wortel en boekweit zorgden voor een bevredigende textuur en subtiele smaaknuances.

Knolselder met gerookte paling: Een gedurfde combinatie die de smaakpapillen prikkelde. De robuuste smaak van knolselder werd mooi in balans gebracht door de gerookte paling, resulterend in een gerecht dat zowel hartig als verfijnd was.

Prei met andijvie: Een verrassend vegetarisch gerecht dat uitblonk in eenvoud. De prei was perfect gegaard en werd verrijkt door de toevoeging van knapperige andijvie, waardoor een lichte en smaakvolle combinatie ontstond.

DESSERT Vanille, eiwit en hazelnoot: Een zoete afsluiting van de maaltijd met een verfijnde combinatie van vanille, eiwit en hazelnoot. De verschillende elementen werkten harmonieus samen om een smaakvolle finale te bieden.

De avond werd afgesloten met nog enkele kleine lekkernijen zoals een echte Gentse mastel. Zelf ben ik absoluut geen zoetekauw maar ook dat hoeft geen probleem te zijn. Het evenwicht tussen zoet en smaakvol wordt ook hier perfect bewaard.

We sloten de avond voldaan af, zonder het gevoel te hebben overdaan te zijn.

Walking into this restaurant, you're greeted with an ambiance hinting at more than just a business lunch. Every dish was like a poetic canvas, where unexpected flavors danced in perfect harmony. The audacity of these pairings, which seemed almost adventurous on the menu, became graceful ballets on our plates. The portions were a masterpiece in balance. Just enough to satisfy without tipping into excess. The wine selections, surprising at first glance, seamlessly wove into the meal's essence. Where some places might play it safe, here they dared and succeeded.

A couple of weeks ago, I had the privilege of dining at a renowned 2-star restaurant. If dining there felt like listening to a well-rehearsed orchestra, today's lunch was like an improvised jazz performance, full of heart, soul, and delightful surprises.
