The food was nice, but I just don't think it warrants these prizes. There is a lot of fuss bout every disk presented "made with this and that, and such and such." Ok, But I just wanted a good steak.
This "Aged" meat is really not my taste, I like a simple steak.
But the basic steak option was already marked sold out, forcing the upsell (convenient) , so next one was Hollstein , I went along with the next one, Berugi at 79 euros..Not aged. Quite frankly it was an ok steak, but I've eaten much better Filet pur's for a less.. That is Fries and Steak. Nothing is included, no sauce, no veggies(Not that I care bout salad). 1 bun of bread to share with 4 people.. and a couple of slices of dries, smoked ham..that was ok, No complaints, but I really didn't taste different from good quality , prepackaged parmaham at the supermarket.. Was the steak good? well sure, it was ok, it was cooked perfectly medium rare, but lacked grillmarks and the taste just was different from normal steak... it was a bit fancier, not what I expect out of a regular steak..But i don't really think it was nicer.
Don't get me wrong , it was all nice in presentation, the hors d'hoevres are all very nice(i didn't have any).. But it stands or falls with the meat and this 79 euro filet pur was not better than the 40 euro filet pur I had 2 weeks ago. (that included sauce)
I had a taste of some of the fancier aged steaks people at my table ate.. Quite frankly , the none aged with fancy name tasted bout the same, the aged one(Simmentaler) had a bit more extra flavor to it, but not something I would take over a good Wit/Blauw filet pur.
Call me a filistine with a poorly developed pallet, but none of it merits the 79 euro for a single dish.
If you don't drink alcohol its either coca cola, bru at 12/bottle, ginger, tonic or moctails, a simple lemon lemonade ,not an option, most Wine bottles go in triple digits..
Took a while to get the deserts, my coffee was long gone by the time table partners got their desert.
Quite frankly, This feels like a restaurant geared at the upsell and markup.. Nice building, but dark and loud, service adds a lot of tralalla and that should warrant these prices? I think not.
700+ for 4 people, 1 bottle of wine, 3 menus, 1 filet pur , 3 deserts, 1 coffee and 2 botttles of Bru ?? whut? This ain't no Michelin star place , nor is it michelin star service, nor is it michelin star cuisine. But the price sure is on par for 1 star Michelin..

"Parma is Cecina de Rubia Gallega" Its beef? Fair enough, but It tasted more or less the same and had same texture as Delhaize Prociutto di Parma which I know very well.
"You were the only one at your table who did not choose the menu." Why would I take a menu when I really don't enjoy fancy starter.. Ever? AT TWICE THE PRICE? How does that invalidate my opinion of the dish I DID have?
I went for Berugi Filet Pur because I alread had Holstein before, I wasn't not impressed.. so went for the higher priced, Belgian Berugi and that price you set, sets my expectation..
That you guys have all kinds of fancy dried meats and tastings does not change the simple fact, that you can't deliver a simple good steak & fries.. You don't have it , which for a meat restaurant is weird.. its the Gold Standard.
That a 79 euro filet pur somehow cant even come close to a 40 euro filet pur. It lacked taste and size. That you have fancier things for those who are into it.. fine, but not having the basic steak.. sorry, that snobbery to me.
Drinks : Conscious choice? I don't like grafefruit or moctails. Doesn't get more consicous than that.

But I want to start off by saying that this is an very expensive restaurant, where the quality of the service doesn't match the food. Also Gillis has a completely over priced wine list, prices that you will not see in most Michelin star restaurants, for the standard of the wine. We started with amuse bouche of pork cheek, which was delicious, followed by starters of beef tartare & pork belly which were both very good. We then ordered a T-Bone steak, which is priced by the kilo, €175/kg. The waitress bought the steak over to the table to show us but never volunteered the weight (1kg according to our bill). The sides that came with the steak where tasty but not fitting of the price of the steak. The guy looking after the wine didn't seem so happy that we ordered one of the cheapest bottles of wines on the list at €69, so we didn't get a lot of interaction from him. This was done on a point of principle knowing the price of similar wines in other restaurants that have prestigious awards. Apart from the wine guy and the weight of the steak not been volunteered, we asked for extra bread but that didn't arrive. These are probably small points but if you want to charge the prices that Gillis charge you need to have a level of professionalism all over the restaurant and not just the kitchen. My complaint with Gillis is the staff. They are inattentive. We wanted to order a second bottle of wine but they ignored our table and the table next to us. I eventually went to the serving area to order a bottle.
We ordered au poivre sauce which they did not bring. Each time I had to go to the counter to ask for the sauces. The table next to us also same experience. It appears that they were more interested in serving the larger table than any couples there. This is a shame really as the food is good at Gillis.
