Brasserie Fou de… — Restaurant in Knokke-Heist

I love good food, I understand wine. But I do not understand the modus operandi of this restaurant. Here is a short wrap up of our experience in this very special restaurant in Knokke: Ambiente: modern, beuatiful lighting, a bit too busy but ok Order: 1 menu (3 courses: bisque de hommard, sole et dessert) 49 Euro, 2 sole 47 Euro, 2 chiuldrens menu, water, bottle of champagne and drinks for the kids. Amuse-Gueule: none. Le bisque de hommard: boring taste, ok but the bad thing: a sharp piece of plastic in the bisque cut into my tongue. The bisque went back into the kitchen... with just a little "we are sorry" and "do you want another one?" the restaurant wanted to solve the issue. But obviously I did not want anymore bisque from that kitchen... Sole: that was ok for all of us. Surely not perfect but really ok. It was accompanied with some french fries (moderate quality) and some crudely-served salade (not seen on th photo). Sole is expensive - I know - but 47 Euro for that still out of range given the overall course. The children were served cod with french fries. That was really good! We decided to change the 3 course menu to 1 sole (having in mind the bad bisque and by waiving the dessert). And now things went really strange. The restaurant insisted on paying the FULL price for the menu... Lots of discussions... Damn, really strange. In the end, I said I am just willing to pay all drinks , 3 soles and the children's menu. The team reacted quite aggressive and said that they could not change anymore the bill - what a strange argumentation line... The customer is the fool here. Very sad that we needed to invest our time into these discussions (maybe I should not insist on my principles...). In the end, they gave in. But they haven't understood the matter: (1) a sharp piece of whatever can really be dangerous (2) you do not treat guests like this... Modus operandi: should be 0 stars Bisque: should be 0 as well due to the plactic piece otherwise 1 for the taste Sole and children's menu: 3 stars Total: 2 stars But definitely NO recommendation at all. It's a pity that something like this is still listed...

Eten: vrij goed. Onbeschofte behandeling. Half uurtje wachten alvorens het eten en de drankjes opgenomen werden.

De drankjes kwamen vrij snel, ook het brood.

Alle begrip voor starters tijdens een drukke periode, alle begrip dat het langer kan duren. Het was mooi weer, wachten in de zon is fijn, het is verlof…

De bediening buiten was in handen van een vriendelijke hardwerkende dame en van een heer. De dame deed 80% van het werk.

Na anderhalf uur wachten, vroegen we vriendelijk aan onze vrouwelijke dienster of het eten wel opgenomen was. Het was erg druk en we waren namelijk anderhalf uur op het eten aan het wachten.

Ze keek het na, en bevestigde de bestelling en informeerde dat het eten snel klaar zou zijn.

Toeval wou dat de andere mannelijke ober (eigenaar?) ons dit had horen zeggen en vragen. Hij werd nijdig en riep “jullie zijn hier nog maar 20 minuten!!” Enkele seconden later riep hij nogmaals “schande! 15 minuten zijn jullie hier!”

We waren regelmatige klanten van l’échiquer. We kenden de zaak via gaultmillau.

Sinds de zaak nieuwe eigenaren heeft, is het niet meer dezelfde klasse. Het eten...

De passage à Knokke vers 15h, j’ai eu un petit creux. L’endroit était calme, agréable à l’ombre, et le service était vraiment chaleureux, souriant et bienveillant. Les boissons sont arrivées très rapidement, et j’ai eu une envie soudaine de croquette.

J’ai choisi une croquette maison au fromage et une autre aux crevettes, pendant que mon compagnon prenait le vol-au-vent.

Dès la première bouchée de la croquette au fromage, j’ai été agréablement surprise : une saveur vraiment originale, que je n’avais encore jamais goûtée. Un vrai délice. La croquette aux crevettes aussi était très bonne, mais c’est vraiment celle au fromage qui m’a le plus marquée.

Le vol-au-vent était parfait : de bons morceaux de poulet, des boulettes, des champignons bien cuisinés, et une sauce savoureuse. Les frites allumettes, pelées à la main, étaient croustillantes et pas trop grasses — exactement comme je les aime.

Tout est fait maison, avec soin et simplicité. Une très belle découverte.
