Cuisine : très bonne Service : à revoir Ambiance : minimale

Quelques remarques :

Un verre dont le pied est ébréché n'est pas à présenter et doit être écarté du service.

Il faut changer de verre entre les vins différents. (Et inutile de demander au client s'il préfère garder 'son' verre).

Sur 3 verres de vin proposés, un seul est annoncé (cépage, assemblage, millésime) au moment d'être servi. Pour les 2 autres, aucune information n'est donnée, dommage.

Le client est tenu de garder ses couverts tout au long du repas. Si c'est envisageable pour les mises en bouche, devoir attendre le dessert pour avoir de nouveaux couverts, ce n'est pas idéal.

Pour rappel, une viande (même très tendre) doit se couper avec un couteau à viande. Pas avec une cuillère ou un couteau à poisson.

Un seul petit morceau de pain par personne pour tout un repas ? Alors pourquoi servir une généreuse et très bonne motte de beurre (fouetté au poivre) suffisante pour une baguette entière ? Et ce n'est pas au client à devoir en quémander, c'est à un service en salle attentif de s'en soucier.

La décoration (presque absente) de la salle n'est pas propice à rendre le lieu chaleureux.

L'éclairage est à revoir. De nombreux spots encastrés au plafond sont installés mais aucun n'est allumé. Idem pour les éclairages muraux en lumière rasante qu'il aurait été bien à propos d'allumer pour habiller un peu les longs murs monotones.

Les gros toyaux galvanisés du système de ventilation (laissés bruts) dans le haut de la salle n'apportent rien de positif à l'ambiance qui se voulait probablement d'être chaude (bois clair, mur beige, ...).

Aussi pourquoi ne mettre de petites bougies que sur 2 ou 3 tables dans tout le restaurant ?

La température de la salle est un peu trop basse. Plusieurs personnes s'en sont plaintes.

Il faut revoir l'aération de la salle, car beaucoup de tables dans une salle de taille moyenne... En début de soirée, rien à dire, mais au bout de 2h, ça commençait à devenir un peu moins évident.

Aussi, c'est plus sympa de venir à table à la fin du repas pour l'encaissement, plutôt que d'envoyer les clients au bar, ... ce qui vous permettra aussi de pouvoir gérer la sortie du client par le vestiaire, qui est actuellement laissé sans surveillance ni accompagnement. Un "au revoir, merci de votre visite, ..." ça a aussi du bon.

Pour les bons côtés, heureusement il n'en manque pas, le repas, certes au timing un peu rapide, était correctement géré.

Les portions des assiettes étaient suffisantes. Les verres sont servis sans exagération dans un sens comme dans l'autre.

La qualité du vin est remarquable et pour un prix raisonnable.

Préparation, produit, dressage, tout est de qualité, original et équilibré.

Le Chef n'est d'ailleurs pas un premier venu, son parcours en témoigne.

Et immédiatement, cela se constate lors du choix des propositions à la carte.

Dans les préparations de type "en deux façons", qui permettent de découvrir différentes aspects d'un même produit en fonction de sa mise en œuvre, le chef vous fera découvrir son talent d'équilibriste pour réussir ce difficile travail.

Et si certains préfèrent plus le côté "naturel" d'un produit et que d'autres préfèrent en revanche un côté plus "travaillé", les deux approches sont ici toutes deux réussies.

Le prix est bien sûr en rapport, mais plutôt contenu pour Waterloo.

Le parking (en soirée) est facilité par la présence de nombreuses places sur les parkings des commerces à proximité.

En résumé, il est dommage de sentir que tout semble calculé à l'économie de moyens autour de l'assiette, alors que le Chef ne semble pas se restreindre pour ce qu'il y...

Enishi by Toshiro offers an exceptional dining experience that blends French and Japanese cuisine in a unique and exciting way. We enjoyed a wonderful meal that included Saint Jacques with mango and coriander, perfectly cooked lotte with Cima di Rapa and a katsuobushi beurre blanc, a succulent langoustine served both as tartare and in traditional ramen, Pluma Ibérique with Japanese rice and lemon from Amalfi, and a refreshing dessert of poached pear with sirop de liège and shiso.

The dishes were beautifully presented and thoughtfully prepared, showcasing Chef Toshiro Fujii's skillful use of quality ingredients. The wine list was equally impressive, featuring a range of natural wines that complemented the flavors of the food perfectly.

The service was friendly and efficient, adding to the overall experience. Although the prices are on the higher side, the high quality of the dishes and ingredients more than justifies the cost.

Most dishes had sea food or fish with one containing meat. You can really tell everything is incredibly fresh. We loved it !!!
