I came across this place during a recent detour through Brantford, and when I saw the sign indicating wood-fired pizza, I knew I needed to check it out. My favorite style of pizza is thin crust from a wood fired brick oven (I.e. the kind "invented" in Naples, and perfected throughout Italy).
I can confirm that Zaza's does make delicious pizza in an authentic wood fired pizza oven. There are no propane or electric "backup" burners (unlike many other "wood fired" pizza spots around Southern Ontario), and kudos for the good selection of authentic toppings (prosciutto, artichoke hearts, etc).
So why only 4 stars you might ask? It was a judgement call, and it is based on 2 observations.
#1 - when I eat thin crust pizza, my expectation is that it is 1 pizza per person. At Zaza, it is thin crust, but their pizzas are more North American style - 1 pizza for many people. There is nothing wrong with that, it is just not my preferred style.
#2 - and I would this one is more impact full than the previous point - is their choice of cheese. A Margherita pizza is sauce, basil, and (ideally) Buffalo milk mozzarella, OR more commonly, boconcini cheese. Zaza used what I would consider typical shredded pizza cheese, which, in my opinion, detracted from what was otherwise a very good pizza.
To be clear, their pizza is definitely top notch, and better than 90% of the competition. They know how to make their dough, and they know how to cook their pizza properly. That is the foundation for any pizza spot, and these guys nailed it. In my opinion, with a few tweaks, in terms of pizza sizing and cheese selection, these guys could really take the Brantford pizza landscape to the next level!

We were raving about each dish! We really like the flatter bread pizza and the more authentic flavoring. My husband was impressed with how very clean the restaurant was and how you can see them making your food. He said to the older lady behind the counter this was his first visit. And she said, “Well, it won’t be your last!”. She knows it and she’s exactly right! My husband was happy with the very large slices of pizza he received and the portions were good. Except that I always want more!! Lol I am used to creamy chicken fettuccine. But this was beautifully rich. The sausage has a lovely mild flavour in a lovely sauce in the sausage penne. And it’s a great Caesar salad- very satisfying. Sometimes they can be a little bit skimpy on the Caesar sauce in other restaurants. This was perfect. Zaza is our new favorite. Nice thin dough, slice was a little floppy, not alot of crisp. Which is crucial to nailing a 10/10 on a brick oven pizza. But is have to emphasize it was very close! Everyone loved it. The ingredients are fresh and definitely higher quality than your traditional pizza joint. The dough was light and the cheese wasn't super greasy. All around great quality. You can tell these folks love making pizza. Definitely one of, if not the best pizza in Brantford. Makes it into my top 10 pizza places in Ontario. Next time I'm asking for my pizza to be a fired a little longer. I'm not afraid of a little char! I'm pretty sure that will easily bring this review upto a 5 star.
