State & Main — Restaurant in Calgary

We went for a big family dinner last night and I am so so so sick. I have celiac disease which was mentioned and I was reassured that they take all precautions and their gluten free items would be safe. The whole experience started off bad and that should have been my warning sign to not eat.

We ordered chocolate milk for my toddler, the waitress wasnt sure they had it so needed to check. No problem, if no milk he'll have apple juice. She wasn't sure if they had that either. Okay what about orange juice. She wasnt sure she had to check. She walked away and I said to my husband "that does not give me much confidence on the gluten front". We had to go find our server and ask to order as the kids were getting antsy after being there for over 45 minutes.

I ordered the main burger. After everyone had ordered the server came back and I was told my meal was cooked on the flat top with gluten containing items but it was okay cause the temperature is high enough it kills the gluten. Every celiac knows this is NOT true, and the biggest red flag ever. I asked for the fries to come on a separate plate because they are cooked in a gluten fryer, but my kids and husband would eat them. My meal came out and the fries were on the same plate as the burger, touching the burger. I know I should have just not eaten the food, but it was a large family dinner with my husband's family and I felt pressure to not be the only one not eating, on top of just being very hungry after being there for over an hour at that point. My kids and husband ate the fries, I ate the "gluten free" burger.

I have never been so sick and had such a severe gluten reaction. This restaurant is absolutely NOT CELIAC SAFE. It will take me weeks to be fulyl recovered, and i am completely unable to function in my normal life for several days. Their staff either need to be trained on allergy protocol, or they need to not offer gluten free foods if they can not safely accommodate it. This is tough because I was so excited that finally after so long the community was getting a sit down bar/restaurant type of place. Tonight I took my friend out to check it out. Got appies which were good and came out fast. We also ordered fish and chips and a steak medium rare more on the rare side. After two trips of saying the steak was made wrong and they had to keep making a new one, an hour passes. Got the steak which was well done instead of medium rare more on the rare side and fish and chips which were cold. Server came twice. And manager came once. They said the kitchen staff just couldn’t get their flow together and they were having issues working together. Meal was taken care of which is why I’m going with 3 stars instead of 1. But for a first impression. Rough start. I know it’s new and I’m thankful that the manager at least tried to salvage the night. My friend will never go back and that was made clear. Advice I would give is if the kitchen continues to fall apart it’s time to pivot and try to approach the hiring process differently. I’d hate to see such a good place be ruined by bad staffing and slow service. If I had this issue, others will and in this small community talk and references to places is everything. So 3 stars for how the manager and server saved the day but 0/5 for kitchen because if u can’t cook a simple steak that has less cooking time than fish and chips. My sister and I went to State & Main for lunch today and had a fantastic experience! The food was absolutely delicious and the service was great. We both loved our meals. I had the steak which was perfectly grilled and served with a generous side of mashed potatoes, sautéed mushrooms, and a Caesar salad. My sister had the Butter Chicken, which came with fluffy rice and warm naan bread—it looked amazing! And the glass of red wine was the perfect pairing. Everything was hot, fresh, and perfectly seasoned. Our server was attentive, friendly, and made sure we had everything we needed without being intrusive.
