FOGO ISLAND HALIBUT was oozing glistening juices from the tender touch of my fork to the crispy thin layer housing the explosion of taste from this moist sumptuous dish. MY VIDEOS CAUGHT EVERYTHING! You can see for yourselves. Joel our server was dialed and attentive. So appreciative of that level and quality of service. I saw the mixologist Brandon working his skills at the bar and I was thrilled to catch him on video. I sped it up so you can see the entire process quickly. This gentleman doesn't rush his process and you can see by the finished product he is artistic and all about taste and experience. What another wonderful visit to the Tremont hotel and restaurant. Review first visit: The Tremont Cafe in Collingwood is sublime. For staters we ordered the FRUIT OF THE SEA and the PINZIMONIO SALAD to share. Once I tasted the salad I was not sharing. Wow! The flavour profiles were spectacular. Crunchie, crispy, tangy and sweet... yummy. And, I'm not a salad girl to begin with but the Orange, White Radicchio, Carrot, Ginger, Fennel and Mint took me to dream land. I was almost unable to stop saying "mmmmmmmmm" whilst eating lol. True! I repeat WOW!
FRUIT OF THE SEA; shrimp octopus halibut and peperonata was tasty, but certainly not worth sharing my salad for.
For the main dish we both chose FOGO ISLAND HALIBUT. I can't rave enough about the juices baby!!!! The fish was gracefully dripping glistening juices on the plate. I opened the filet with my fork tenderly and it showed me how perfectly cooked it was. My partner left the halibut skin on the plate... OMG... I would hear nothing of it and with my fork brought it over to my plate and finished it. The rice the fish was resting on was nothing short of an explosion of taste sensations in my mouth. You can tell that the chef has put much thought and effort into creating these dishes and the layers of taste that each individual item stands out as a star and yet each one blends together beautifully as a team. I'm not sure I can identify everything that was in the rice but calling it simply rice would be insulting to the dish because it was so complex and yet so perfectly in harmony. Our server LEXI was engaging, knowledgeable and you could tell she enjoyed working there. She explained what was on the menu and offered suggestions according to the questions we asked. THE MEAL, THE EXPERIENCE , THE SERVICE, and THE AMBIANCE were unique and rarely matched in my opinion. What a gem of a place!
The Tremont Café is quality and class.
AND from what I can read from prior reviews there is a standard that they have managed to uphold throughout years of service and yet there is nothing dated at all about the menu, it is NEW, FRESH and VIBRANT.

He genuinely cared about our dining experience and encouraged us to give them another try. REVIEW: we dined there last night (party of 6) to celebrate a birthday. Our reservation was for 5:30 pm. Two people in our party had shellfish and nut allergy and they took extraordinary steps in sanitizing before plating our food to ensure no cross contamination. Our server was Alicia. The positives - the salad was amazing- beets carrots ginger mint carrots with radiccidio lettuce . Light fresh perfect summer salad. Two of us ordered the harissa chicken with fingerling potatoes which was good. One person ordered the duck which she said was not as good as last time she was there. The dish looked dry and grey and not very appetizing. My husband ordered the burger which actually had raw meat in middle, completely uncooked. When pointed out to server she defended it and claimed they grind own meat and use same meat for steak tartare ( which is raw meat) no one wants that in a burger. No offer to replace it with a cooked more burger and no adjustment to the bill either and my husband simply ate the fries and wasted 3/4 of the burger. I would not recommend this for kids!! They did provide a taste of champagne for each guest for toasting the birthday and a complimentary dessert for the birthday girl which was nice. They need to update their menu on line. It showed two pasta dishes which we have had there before which were fantastic and we would have ordered but they no longer have on menu yet shows on line. Their new menu is more middle eastern now. This restaurant is now part of a hotel and I would not recommend for anyone going children as there are no items on the menu that any child would eat. It’s geared for adults only. Price wise you can expect to pay about 125 per person for appetizer, main and 2 drinks. Cocktails are 21 each on average. That said our meal and experience was not as good as their previous location based on menu offerings, my husbands raw burger and their lack of caring about it and no patio dining anymore. Read moreThe Tremont Cafe was a lovely overall experience. The host and the waiter treated us very nicely for our anniversary celebration. He was very knowledgeable about the meals and drinks available and provided thorough information on what's available. We tried the Tasting menu as it has become quite of a tradition for us for our wedding anniversaries. Being from downtown Toronto and having access to some very nice restaurants we have had some great experiences with tasting menus.
However, the Tremont's tasting menu was probably our least favorite out of the 4 we've done over the years. The flavors and dishes just did not hit our palettes the way we have experienced before. I believe 2 to 3 out of the 6 dishes were hits for us. The one's we didn't like either were very salty or did not pack the flavor profile we expected.
The final dish was the wagyu beef sample with 2 potato sticks, a dipping sauce and some salt. This meal was very good and the wagyu alone made up for the shortcomings of the earlier dishes. That being said, they suggested an order to eat the dish in, beef, potato, dip, then salt, the salt was probably unnecessary as the dip alone was great.
The price was a bit extreme as well given our opinion after finishing the dishes ($145p/p at time of writing). The Pine in Collingwood offers the same price range for a nicer experience and more exotic tasting menu. I would suggest a price decrease for the tasting menu to something more around $110 p/p which would be more fair.
We would definitely visit The Tremont Cafe again to try their normal menu items, but unfortunately will probably never do the tasting...
