I recently had the pleasure of dining at Gibsons Pho Le, and I must say, it was an exceptional experience from start to finish. From the moment I walked in, the warm and inviting atmosphere immediately made me feel at home. The staff were incredibly friendly and attentive, ensuring that every detail of my visit was perfect.

The menu offered a fantastic variety of traditional Vietnamese dishes, but I couldn't resist trying their pho. I opted for the classic beef pho, and it did not disappoint. The broth was rich and flavorful, perfectly balanced with tender slices of beef and fresh herbs. The portions were generous, and every bite was a delightful blend of textures and tastes.

What truly stood out to me was the quality of the ingredients. Everything tasted incredibly fresh, from the crisp bean sprouts to the aromatic basil leaves. It was clear that a lot of care and attention goes into preparing each dish.

I also tried their spring rolls, which were light and crispy, paired with a delicious dipping sauce that added just the right amount of tangy sweetness. To round off the meal, I had a refreshing iced Vietnamese coffee that was the perfect blend of strong coffee and sweet condensed milk.

Forgot to take pictures of our dishes 🥲 but we got Pho Bo vien (noodles with beef balls) for the kids, hubby got Bun Bo hue (spicy noodle soup) and I got the Bun thit nuong (grilled marinated pork with vermicelli). My vermicelli bowl was delicious and you can’t really mess up this dish at any Vietnamese Resturant. Hubby’s bun Bo hue was actually spicy, usually they will dim down the spicy ness level for everyone’s palate. When we get bun Bo hue at other restaurants, we ALWAYS have to put extra chilli peppers or sate oil to spice it up but he didn’t have to at all. Very good if you can handle spicy 🌶️ Last but not least the kids pho was surprisingly the star I believe, I wasn’t expecting it to be so flavourful and very good! Yes! Vietnamese food in Gibsons! Thank you!! Tasty rare beef soup with tender beef, flavourful broth, fresh sprouts & basil. Spring rolls did not taste like they were freshly cooked but maybe fried earlier and then warmed up when ordered. The wrapper looked & felt overcooked but the filling and dip were tasty. We did not receive the drinks that we ordered and paid for but I didn’t notice until i was home. They were very busy and stressed out and for a place that you’d think would be primarily takeout focused they were not properly set up for that at all. At one point several staff were even yelling at each other. I felt bad for them and it was uncomfortable. They just opened about a week ago so i am sure all the kinks will work out over time!
