The food is artistry, but also more local than local — foraged, game meats, fish caught by chef Zach Keeshig’s cousin. Our kids joked that we’d be eating pine cones, and I think they were used in some way at least twice! What also sets Naagan apart is the intimacy. Chef Zach explains each dish personally — the origins of his ideas, as well as place, and treatment of ingredients, which is obviously extensive. I left feeling like I had had the pleasure of meeting a person about to be famous and a restaurant I wouldn’t soon have access to without a long wait. Chef Zach was warm, grounded, letting us ask curious questions and spent time at each of our tables - introducing the dishes and eating them letting us explore the individual ingredients with his knowledge and insights in table-to-table visuals.
