I had high expectations for Baumann based on the reviews I read beforehand, so I was slightly disappointed to give it a 3-star rating. While the concept of a 7-course meal is meant to be a culinary journey, the experience here didn’t quite deliver the “wow” factor I was hoping for.

The ambiance felt underwhelming. There were no small touches like candles or creative decor to create that inviting atmosphere, and the music selection—primarily hip-hop—felt mismatched with the fine dining setting. For a restaurant in this price range, attention to detail is expected not only in the food but also in the overall environment.

As for the food, while some courses were enjoyable, the meal as a whole lacked the kind of thoughtful pairings and bold flavors that elevate a tasting menu into something memorable. I didn’t experience the sense of discovery that makes this type of dining special.

I am really impressed by this restaurant in Sherbrooke. The food was creative and delicious. Each dish was amazing. The server was super friendly! I also enjoy their drinks :) The only downside was the service was quite slow on Sunday. We arrived at 6pm; and ordered the food around 6:10pm. While the first dish arrived quite soon, the gap between the dishes was really long. When the dessert (7th dish) came, it was nearly 8:30pm. 2.5 hours for a 7-course meal was just too long (compared to many other similar restaurants we went). Just had one of the best meals ever. We went with the 7 course chef’s choice menu with wine pairing. Everything went so well together and we left full and more that satisfied. The owner is an amazing guy who takes the time to talk to each table and makes you feel very welcome. The chef really knows her stuff. Food I didn’t think would go together made music for my taste buds. Over three hours from where I live but so worth getting a hotel and taking a weekend off...
