How to begin other than with a WOW! And then how to pursue without threatening you to go at all costs! I couldn't even come close to sharing the pleasure that was experienced when eating there for the first time, aside falling short of what was a truly memorable culinary experience! My wife and I had been wanting to try L'empreinte for a while. It's big bay window giving on to King Street always attracts onlookers. Although for some reason, there never seems to be that many people, which after dining there is rather puzzling. We had made reservations for 1830 and when we arrived, the place was utterly vacant! Which is always somewhat wearying for a place serving food. We were greeted very well by Sophia, and permitted to choose any table we wanted, so we picked the Table des chefs, which made us feel like Queen and King from the get go! Having dietary restrictions, I was told to lay them out at reservation time, which I did. They remembered everything, and when presenting the dining concept and disclosing the menu, everything was laid out plain and simple with suggestions and alternatives. We were offered 4, 5, or 7 services. We settled for 4, but should have gone for 7! Simply because everything was so delicious! From the drinks to the mise en bouche, to the main dishes! Also, even the drinks were surprising, original, and inventive! There were many bottles of wine to choose from, but being light weight, we ordered a Martini and a microbrewery beer. There is no menu per se. The concept is highly intriguing, as it's a surprise what will be on your plate. You shall not be disappointed! Presentation is stunning and each course is brought and explained by the chef himself! A must if you're in Sherbrooke for a visit! We arrived early at L'empreinte to find the restaurant set up as an actual farmers market!! Locals were stopping in to by their groceries. We wandered off to come back as the farmer was packing up and the restaurant's real purpose was coming to life.
Every bite of this over indulgent meal was ridiculously fantastic - thoughtfully prepared, beautifully presented, wonderfully narrated, and delicious beyond compare.
We drove 5 hours to come here on a hope. I would travel many times as far to return.
With a tasting menu which changes monthly, you be at the chef's most recent whim.... but that is exactly the point!
While more expensive than a simple dinner, the price is shockingly reasonable given the craftsmanship of the dining experience.
As a bonus, I am a hobby potter and all of the dishware was lovingly handmade locally as well.

The menu is either you get the 7 or 5 tasting menu with wine accompaniments of full or half accord.We chose to get the seven.The first one was a charcuterie with sapin.Nothing special and the sapin was too strong.It completely killed the plate.We gave a benefit of the doubt for the next plates but until the last plate of dessert, nothing stands out.I found that most or some of the ingredients of the plate doesn't go along well.Everything in the buffalo plate was all sour.The mushroom with gnocci plate was ok or we can say good but not exceptionally good.For a restaurant that categorized as fine dining,....All the plate lacks refinement taste and texture per se. Even the wine accompaniments doesn't blend well with the plates.There was probably 2 or 3 that's ok.
