Making lemonade out of Lemons!! Tonight we were booked for a my wife’s birthday dinner, and at the last minute our reservation for the patio was canceled due to bad weather. Oh so disappointing… BUT thankfully we were able to secure a spot at the pizza oven bar. I know 1600F… but I will say that this was the BEST seat in the house!!! Fung was spectacular, and made our night!! We learned so much about different pairings with all of the many dipping sauces that Fung made us try!! Our server Courtney provided excellent service and advice on food selection and man she makes an mean Aperol Spritz!!! We also had great attentive service from Ryland (sorry if I spelled it wrong). Good luck with your studies at Algonquin college, and eventually Whistler!!! Finally the FOOD… this was unbelievable!! We started with the famous focaccia, which did not disappoint, followed by the grilled egg plant parmigiana- DELECTABLE, and the Caesar salad with anchovies, charged corn and heirloom tomatoes that made this rock out of this world! Next we had the gnocchi and short ribs parpadelli.OMG… totally put me in pasta heaven!!! What a night. Great PEOPLE and Great FOOD a deadly combination. We’ll definitely be back. Thank you!!! We had a reservation for patio dining at 5:45 p.m. tonight however finished our kayaking day earlier & arrived at Fabbrica right when they opened at 5 p.m. in hopes that we could start early. They happily accommodated us. For our starters, we ordered the tartare with cured egg yolk served with nicely toasted pita & a bit of arugula as well as their pizza special with freshly picked chanterelles mushrooms. Our mains consist of the pappardelle pasta with braised short ribs & my husband had the braised short rib course. We finished our meal with a strawberry rhubarb pavlova which is served with lavender cream. The lavender is picked right from their garden which we were pretty much sitting next to. Not only was the food heavenly, the service was above & beyond. Our server Peter gave us just the right amount of attention & I also left my phone on the table and a nice female employee literally ran so fast to chase me down so I didn't leave my phone there. We thoroughly enjoyed our visit & highly recommend this place for dinner.

Fabbrica is located on the main Street on Thornbury. Owned by American-born Canadian Chef Mark McEwan. My honest review is based ony personal experience. I thought the decor was lovely and welcoming. The staff who served us, were also welcoming. We ordered: 1. Fritti, a seafood appetizer made of tiger shrimp, baby squid, caper aoili and lemon. The appetizer arrived and we were not impressed. The presentation was not what we expected, it tasted a bit bland, though soft. It's a 5/10. 2. Caprese pizza, a basil pesto base, heirloom tomato, cured tomato, buffalo mozzarella, and pickled shallot. It was delicious. Fresh out the stone pizza oven. It was soft, hot, and very tasty. The pizza maker needs to wear a hairnet. He has long hair and everytime he shook his head my anxiety slapped me. All-in-all, this Fabbrica experience was a 5/10. I will say this, their wine options are amazing, it's a small binder.🍷🥂

Great food, service needs improvement. We dined with a group of freinds last weekend. We had the calamari fritti and it was a bit too greasy, the ceasar salad was good. Our mains were the salmon which was good and it was served with a fennel salad which was amazing. My husband had the lamb and it was also good. We were surprised at the portion sizes because when we had previously been there they were on the small side. This time they were a good portions. We had a couple of issues on the service side from someone at our table trying to order a bottle of wine, made two selections, neither was in stock, the waiter then suggested a third and then came back and told him that was also not in stock, but the icing on the cake was when a manager came over and speaking in a raised voice told us that they had been updating their wine list all afternoon, and started getting mad at our freind. Later the server started clearing all of the plates while I was still eating and then stood beside me waiting for me to take my last bite so he could take my plate away. For sure I thought they were trying to turn the table over to new guests, but that wasn't the case because when we were leaving there were empty tables. A couple said thank you to one of the employees behind the bar, when they were out of sight, she said to another co-worker "and don't come back". Honestly if you work in the restaurant business, you should like to deal with people. We witnessed three employees here all with real attitudes. We all agreed that we are not coming back and it's not because...

Really solid dinner on the weekend. As it stands, I would rate it a solid 3.5 stars. The service was attentive, the space is great and it’s a welcome addition to some already great restaurants in Thornbury.

We had a good mix of food - four appetizers; a variety of mains - burgers, pizza, pasta and desserts. All quality ingredients, generally well prepared. Nice winelist with a good range. Pizza was tasty - not quite a chewy Napoletana not a Teglia like downtown...burgers were really ‘beefy’ tasting - nice! Pasta was fresh with nice ingredients.

I’ve dinged them 1/2 Star for three things that I think show a few growing pains (to be expected at this stage - sort of) 1. Kitchen wasn’t able to serve everything at the same time. Both apps and dinner had a delay on one dish. Not just a minute or two. 2. This contributed to temperature issues - plates were warm but a number of dishes were too cool. Deep fried calamari was too cool, burger buns too cool and my pasta dish too cool. This drives me crazy and can quickly turn 5* food into 3*. 3. Seasoning - most of the dishes were fine, a few dishes (pasta) were a bit flat. You know the drill - how can you tell if it’s properly seasoned...taste it.

Not negativities, but a distraction / irritation on a $75pp dinner (including a bottle of wine). Chef was in for a visit that night, so I’m sure he’s keeping things pointed in the...

This was my first visit to Fabbrica. My friend recommended even though her last halibut was dry. Our table had 2 halibut orders were flavourful and moist, burger order was good, short rib pasta dish was mostly just pasta and a couple small Pieces of beef. Two steak frite; one was too peppery but cooked as requested, my steak came too charred and well done. They made new steak that was cooked right however it definitely was not AAA beef and too salty for my liking. The size was really small (never seen a striploin so small before, ever!). Perhaps this is a problem with the thickness being 1/2 inch at most it is difficult to cook well. I feel if I can make a better steak at home, it takes the incentive out of dining out. I couldn’t have an appetizer as most items had canola oil in them. With a newly developed canola/ soy oil allergy it would have been nice if they had an option like vegetable or corn oil to have the shrimp calamari fried in. Even Caesar salad had canola so couldn’t have that. I did appreciate the vegetable side in lieu of fries. Overall the portion sizes are small, with exception of burger and pasta. I agree with other reviews that the food is a bit pricey for what you get. I may visit another time to give them the benefit of doubt that it was just an off night. Definitely no...
