Review Bias: I prefer lighter and thinner Flavorings and therefore do not use aditional condiments to alter the dish.
Nha Trang is a pleasant surprise to find in a large town. Nestled right on the side of the main street is a little cafe that serves Vietnamese food.
The service was excellent as far as small asian places go, offering a complimentary pot of tea soon after seating.
The decor looked a little dated, but hardly surprising when you see the menu prices and the relative size of the portions. this is a place that made the right compromises.
I order my standard review order of Special Pho, The Spring rolls, and Special Bun- the Noodle salad to-go.
The Spring rolls were pretty good, it arrived hot and fresh from the deep fryer judging by the evenness of the browning. the Spring rolls was made using a rice and flour wrapper stuffed with noodles, yam, carrots, and bits of pork in a loose packing.
The next to arrive was the Special Pho. The Special Pho represents all the topping options available. The soup arrived very hot and with firm noodles. after adding lime, sprouts and mint. I tasted the soup and although it was well made, it lacked the depth, and slightly sticky mouthfeel that adding Gelatinous cartiledge and tripe added. However, that's my prefrence. The broth otherwise is light and seasoned well.
The Bun - noodle salad I usually order to-go. I do this to evaluate their packaging and serving portion for take away in comparison to table portions. glancing around the room the serving size for table service is well portioned and good value. the take home portion has a little less noodles, but the toppings are the same. the topping in the special include; carrot cucumber and Daikon salad, grilled pork, grilled vietnamese sausage, spring roll, the topped with a peanut and fried garlic topping.
overall, one of the best Buns ive had in recent years the marinated meat is well marinated and can stand out on its own though it plays well with the other ingredients. the Sausage was nice too.
Overall, I highly recommend this place for people that are exploring Vietnamese food and arn't into more traditional ingredients and for Veitrans( see what I did there?) who need a safe place to initiate newbies into Vietnamese food or to try a lighter broth...

The wontons were crispy and nice filling, my first bite reminded me of the ones from my childhood not greasy and tasted like clean oil. The wonton soup, nicely cooked wontons with a delicious broth that was so savory. The fried rice with chicken, egg and veggies was fragrant, with a mild flavor, the chicken was a little over for me but still tasted good. The beef with the fried egg noodles had a ton of veggies cooked perfectly with a mild garlic oil, the beef was flavorful but not over sauced. The vermicelli bowl is something I order at every Vietnamese restaurant and this 1 was great tons of fried almost charged pork that was tender and moist. The meatballs just wow probably the best I have had, great texture, not to sweet full of flavour. The crispy shallots and peanuts had a good contrast to the soft vermicelli, the pickled carrots were a flavor bomb and the cool lettuce was refreshing. The fish sauce was homemade and had a zing to it. I do wish that it had cucumber but that's me. The 1 item the we doth agree we didn't love was the deep fried spring rolls, they tasted ok but the filling was a bit compacted and ended up a bit mushy. We were given plumb sauce and we asked for hot sauce and she gave us a little dish that was refilled it for us. Oh and a cool little thing they brought the fork and spoon to the table in a little paper cover...

When my wife and I got there we were the only ones there, then a couple came for take out. 5 minutes after we ordered, another couple people came in and ordered. My wife got her appetizer, and some time later, her soup. I waited patiently for my Pad Thai, while my wife began eating. After some time, the server came out with a couple orders of Pad Thai...but delivered them to the two people who came in 5 minutes after we had ordered! I then had to wait another 5 minutes before they brought out my Pad Thai. While it certainly wasn't the end of the world, it is nice when you go out for dinner with your significant other and can enjoy your meal together...at the same time (and not wait and watch people that came in after you ordered, get their food...which happened to be the same thing you ordered). The Salad Rolls were great though, the chicken noodle soup was meh, and the noodles in the Pad Thai were way overcooked and over sauced.
