I need to go back and revise my review of Musoshin in Gion, Kyoto. Because let’s be real, Musoshin Toronto is hands down better. And I’m not alone on this one.
I’m still not totally vibing with their take on ramen broth. It kinda reminds me of Chinese da lu mian or Korean ul myeon. You know, that soup thickened by starch situation. The problem is, a thick broth needs some kind of acidic or spicy punch to cut through all that texture. Otherwise, it’s just… boggy.
Now, let’s talk about their tsukemen. Not gonna lie, my tsukemen experience is limited, but the tsukemen here was a lot better than Tokyo Station Ramen Street. Wink wink, nudge nudge, you know which one I’m talking about—just look through my reviews or Google it.
At any rate, when I first dipped the noodles in the broth, katsuobushi came out swinging like Gervonta. I LOVE katsuobushi, so I didn’t even dodge the punches. I let them land right on my taste buds. But after a while, it was a bit much. However, Musoshin already knew this would happen. So they laid a generous amount of thread chili to fend off the aquatic punches with spicy kicks of your own. It was nice to go tit for tat between the flavours of katsuobushi and spice! A true culinary combat in the bowl instead of an octagon.
Musoshin’s exemplary taste probably comes from the fact that they make almost every ingredient themselves—even their miso is homemade. Have you ever tried to make miso? I didn’t think so. There’s a reason it’s a dying art. Respect.
Oh, and I almost forgot the best part. The server at Musoshin. After the meal, we had this really pleasant conversation. It felt like I’d been transported to a parallel universe Kyoto where everyone spoke English. She was frank, friendly, and clearly passionate about the food. My go-to appetizers is the chicken karage! For the main I got the special Mushoshin Ramen that has a bit of everything and my wife got the vegetarian ramen. For desert we tried the strawberry mochi and cheesecake.
