We came with resos on a Sunday. The hostess and server were just the right amount of friendly.
Restaurant was really dark and sexy. In the middle of the restaurant is where the sushi chef does his magic.
Wagyu tartare (36) you get 2 pieces of wagyu tartare. It was okay but not 36$ good. The beef was very fatty and melt in your mouth. The toasted brioche was crunchy and went well with it. I couldn't taste the foie Gras snow. If you write foie gras on the menu, then you should get that savoury umami hit from it but I didn't. Wish there was some kind of sweetness to it
Scallop ceviche (24) was very tiny. But it was enough. The scallops were really creamy. It's served in a tiny cup and looks very underwhelming (may want to rethink the plating on this one). I liked that it was not fishy
Salmon dip (17) - salmon lacked salmon flavour. All I was getting was smoky flavour. The taro chips were nice and crunchy and were very addictive.

The food was a bit hit or miss. For a place that brands itself as a raw bar, I expected the tuna tartare to be a standout, but it was honestly a letdown, lacking in both flavor and freshness, and served at a concerningly warm temperature. Other dishes were okay, but nothing particularly memorable.
Service could also use some fine-tuning. A small example, but when I went to retrieve my coat, the server who checked it in just handed it to me over the counter. It felt awkward and impersonal, a missed opportunity for a bit of hospitality. Even when you shop at Simons, someone walks around the counter to hand you a shopping bag!
Overall, the restaurant is definitely on the pricier side for what it delivers. With a bit more attention to food quality and service details, it could be something special,but for now, it’s more style...
