I've always loved the build-your-own 車仔麵 (cart noodles) and this did not disappoint on my first day back in Hong Kong after... 4 years. I had 油麵 (oil noodles), with 大腸 (pigs intestines, highly recommend), 豬紅 (pig's blood pudding), 魚皮餃 (fish wrapper dumplings, which you can't find in the UK), and 紅腸 (red sausage). Only fault I can find is the broth could be more flavourful, definitely not spicy even though the staff said it was.
I actually walked in here 4 years ago with my white ex, sat down and immediately walked out because I wasn't happy with the attitude of staff when I asked questions, like how do I order etc. But this time, the staff were polite and service was good - for Hong Kong standards.

Everyone has to queue outside the shop to choose their noodle and ingredients when they reach the counter, and then have it brought to their seat after ordering. As it was the weekend, there was a long queue, so I came back on a weekday, fewer people, but still had to go through this business of choosing at the noodle counter.
Anyway I got my noodles, the noodles were rather soft, over soft I would say, with the soup base, it tasted a bit bland. I think next time I will just have the gravy without the soup, but I don't think it will be so soon. Even the car noodles at Anton street taste better, also more choice of...

I ordered thick egg noodle with pig trotters while my wife had rice vermicelli with beef brisket, and with extra toppings of curdled pig's blood and fish skin crisps. The first thing I noticed is that my soup wasn't steaming hot. Nothing serious, yet I believe the fish skin crisps, the best tasting ingredients among all, would have tasted even better if soaked in hot soup. The cons, noodle's portion isn't enough for an adult.
