Bad with steaks. No thermometer used in preparation of meats, lower grade meat sold as premium.
You will not find a single steak that is tender, cut correctly or cooked according.
I ordered a medium rare piccanha and received a tip cut, not dried brined, not sou-vied or any other tenderizing method. Fat cap was inedible, raw and with silver skin between fat layer and meat. The meat itself was purple-rare in the middle and scorcher at the top, the fact that from order to table took 10 minutes tells me it was prepared in a very hot grill and only turned once (no indirect heat cooking)
