I cannot give this place enough stars!!!! We had a taste for ceviche so we had QERO Pisco Bar on our list for must go eateries before leaving DR. Dare I say we found our FAVORITE ceviche spot IN EL MUNDO?!?
The Ceviche Mixto with Ají Rosoto was absolutely delicious. Every ingredient came together so beautifully . The pescado was super fresh, even the octopus that I could only eat fried before felt like a fresh piece of tilapia!
The Ceviche Clásico was delightful as well, but I prefer the aji flavor and color to the classic.
The ambience was also very nice; we came in around 5 pm on a Sunday after a round of golf, so they were pretty empty as they close at 6 pm on Sunday. But it was perfect timing for us, as the service was perfect and quick.
Our waitress was very accommodating and offered great advice on our food choices. I ended up getting 2 Pisco Sours (which I saw on previous reviews that were popular, and now I see why) which were absolutely fantastic! I likened it to a whiskey sour, but with the foam… and now I actually prefer pisco to whiskey as it’s much lighter in flavor. I also got one drink, I don’t recall the name; but it reminded me of a Long Island iced tea.
We also got an empanada for appetizer in which the dough was super fresh and the filling was just as fresh and flavorful. And Lomo Saltado for dinner.
I can’t say enough about this place, we will be back...

•Tiradito Apaltado: Salmón fresco, leche de tigre de vegetales, aguacate y chalaquita (Lo amo)
•Tiradito de Pulpo al Olivar: Pulpo importado, salsa de aceitunas botija, alcaparras, aguacate, aceite de oliva. (También lo amo )

*También me gustó la especialidades de la Casa: Pisco Sour y Pisco Punch.

If you are going to this restaurant for the first time, take advantage and ask for its "Cold tasting round" that includes medium portions of five cold dishes from its menu.

I ordered a red velvet cake to go and they took 25 min to give it to me.They said they had to put it in the microwave since its COLD?
