Great ambience and service and great l'apero time over beers. When we got our main dishes, we informed the garcon the guinea fowl was very tough and flavourless. He acknowledged, went into the kitchen, but then came out busy serving others as usual. When he came pick up our dishes - my fowl was largely untouched except the edible mushrooms and the skin of the fowl. My husband asked him politely if he told the chef. He finally replied in English, said chef said that that's the way and "there is no problem".
In normal circumstance elsewhere, it is a customer's call if there is a problem. The waiter is expected to proactively reply after diners expressed a concern, so something can be done to rectify in one way or another. In this case, the silent arrogance expressed and lack of any response except charging us the full bill "as normal" was such a pity.
