This is an exceptionally talented ice maker. It so happens that part of the year I live close to another supplier of one of France’s top ice chefs but I travelled to the charming city of Arles for the photography festival. Ravi is an additional gem of taste for this town. The salon has not yet been widely discovered but consider this: the freshness of some of the most difficult fruits to transform such as peach is so lovely that I went back a day later to check if I had not been dreaming. I am trying to lose some weight and I’m succeeding but I’m delighted to have been able to taste eight flavors in two days. OK, no ice tomorrow. But Ravi alone is almost worth the trip by itself.
