This was a lovely find. There were 8 of us, 4 went for the menu decouverte suggested by Flavian the owner. The basic idea is that you know what the main part of the meal will be (fish or meat), but the entrees before that are chosen by the chef. The others went a la carte. Nobody was disappointed. In fact we returned next day mid afternoon when the kitchen was closed and Flavian produced a croque monsieur truffe that was one of the best i had ever had. The place has only been open 4 months, the staff are all very friendly . Pinch is set on the corner in one of Bordeaux back streets, the doors open onto 2 of the streets? Flavien nous reçoit avec chaleur, il prĂ©sente la carte, prend le temps de discuter, dâĂ©couter ce que lâon aime, et propose ensuite un menu dĂ©couverte fait sur mesure. Nous avons choisi la version viande : incroyable. Une cĂŽte de bĆuf de plus de 1 kg, parfaitement cuite, tendre et savoureuse. Avant ça, plusieurs entrĂ©es toutes aussi rĂ©ussies les unes que les autres, et mĂȘme chose pour les desserts. Rien nâest laissĂ© au hasard, mĂȘme le pain est excellent !
Ce qui mâa le plus impressionnĂ©, câest le chef. Une petite cuisine⊠et pourtant une capacitĂ© Ă sortir des plats soignĂ©s, gĂ©nĂ©reux, pleins de goĂ»t. La jeune Ă©quipe est impliquĂ©e, souriante, passionnĂ©e. On sent quâils aiment leur mĂ©tier et ça fait toute la diffĂ©rence.
Le menu dĂ©couverte est Ă 39 âŹ, et franchement, vu la qualitĂ©, câest plus que raisonnable. Si vous aimez lâapĂ©ro, je vous conseille aussi lâassiette de tapas ou de charcuterie : un vrai rĂ©gal.
