I've found the Chicoula while wandering by foot in Bordeaux. From the exterior it is a small and cosy place, the lines and style of the interior appealed me to enter and try. Unfortunately they had no place at that time. So I booked a place and we went with my wife. The first impression when inside is that of a delicate and familiar place. We found the waitress and chef (that we met before leaving) very friendly and professional. We choose the menu découvert at 35 euros per person. I will not detail the dishes, as I imagine that not listing them before they are served has been chosen to be part of the surprise and discover of the place. However, we had a tasting and light mise en bouche. The next course we really appreciated for its particular egg. Afterwards we had a dish with fish and one with meat, both were really good, served with appealing and unusual vegetables that was both surprising and very good. The dessert was also appreciated, again in the French tradition, but with some changes, some unusual ingredient but always delicate and savourous. So we really had a great time! The sole less positive point I would mention is that the tables are somehow too close to each other, so it is difficult to find a good privacy. Un ami artiste qui a du goĂ»t, qui vous montre ses photographies et qui vous montre son talent dans l'assiette. D'abord il a fallu mettre les papilles sur le bon rail avec une mise en bouche alliant ce jus de persil, cette mousse de foie de volaille iodĂ©e pour habituer le palais aux premiers coups de peintures. La Saint-Jacques arrive sur une assiette rappelant le bleu de l'ocĂ©an. Le vert Ă©meraude du persil revient, les reflets blancs nacrĂ©s du chou fleur croquant, crĂȘmeux rappellent quant Ă eux les reflets du soleil sur l'eau. Que dire de ce lait de coco qui vient caresser le palais comme une Ă©vocation des lagons, des plages immaculĂ©es de PolynĂ©sie, paysages qui ont jalonnĂ© l'histoire du chef. On continue la galerie avec l'encornet et cette fois-ci la terre est visible depuis le vaisseau, on retrouve le fenouil et la pomme, toujours ce vert auparavant persil maintenant issu du fenouil. Les couleurs restent "froides" mais la gourmandise du chef et la France pointe, le beurre qui a rendu cette pomme et cet encornet si savoureux et tendre est bien prĂ©sent comme un message : "Une escale est prĂ©vue". Puis la mĂ©diterranĂ©e, le sud-ouest avec un Cabillaud confit, une brunoise de Chorizo ibĂ©rique, une mousse de potimarron. Orange, rouge... on monte en tempĂ©rature et en puissance dans les saveurs. La canicule. Puis l'explosion, le tableau salĂ©, farandole d'amour avec cette pintade dont la texture m'est encore inexplicable tant elle Ă©tait tendre. Betterave, le rouge de la terre, chaque gorgĂ©e de vin est la prolongation du plat.
Le dessert est un dernier çùlin, une absolue masterclass. Biscuit de GĂȘne et poire pochĂ©e dans un vin chaud, crĂšme de marron. Je suis de nouveau enfant en Alsace Ă me dĂ©lecter de la pĂąte Ă biscuit de ma maman, pleine de canelle et d'Ă©pices.
Discussion, rire, anecdotes pour terminer avec le chef. Ce monsieur ne nous laissera pas repartir sans une surprise: son petit financier cacahuĂšte miel.

I took the menu dĂ©couverte, which included 2 starters, one cold plate, one main course, and 2 desserts. Every single dish is amazing. The ingredients were fresh and in season. I adore the cookie served in the starter and the sauce of the cold plate. The dessert was amazing. The service was also excellent. The lady suggested me some wine choice, which I love as well.
