I can die happy now. I don't know that I even have words to describe this. I'm a diehard gelato fan and don't even usually like ice cream. Each of the four flavours we got were better than anything I've had in Singapore. They've mastered the art of balancing their flavours - the clementine bursts with flavour like a juicy freshly-peeled fruit; the armagnac is clear, but isn't so strong the alcohol burns my mouth; the green anise is not so subtle you wonder if it's there, yet not so strong that it nauseates. I don't taste the milk/cream in these.
Corsican clementine - can I give this 50 stars? Clementines are in season, so we chose this flavour. It was a fresh sorbet - although I hesitate to even call it that because it's not the icy hard sorbets I'm used to. It was soft (without melting too quickly), lush, and burst into flavour in my mouth. I often think fruits taste better fresh than turned into ice cream, but this was one clear case where I was wrong. It tasted as fresh as the clementines we had in the morning, but even better because the sorbet was cold and soft.
Pruneaux-armagnac - 5.5 stars I love alcoholic desserts and this is exquisite. As mentioned above, the armagnac was obvious, but they've gotten the right amount so it doesn't burn. The prunes were a perfect and surprising (perhaps I'm not aware if this is a common pairing) combination.
Lemongrass-pea blossom (blue pea) - 5 stars Coming from Southeast Asia where lemongrass and blue pea flowers are native, I wasn't sure they would be able to pull this off. They proved me wrong. The lemongrass flavour was fresh and the blue pea colour was beautiful. It's "only" 5 stars because it was a little too sweet, which I noticed more towards the end.
