Indeed, one bite and I could almost feel the Mediterranean lapping at my ankles – a transportive quality that suggests someone in the kitchen understands the fundamental chemistry between seafood and dough. Yet this maritime reverie was somewhat interrupted by the archaeological expedition required to locate the pizza's bivalve population: precisely two mussels, lurking like rare artifacts among the general aquatic debris.
Two mussels. On a signature seafood pizza. It's the culinary equivalent of billing yourself as an orchestra and showing up with a kazoo and a triangle.
The true star at Pasta Basta isn't found on a plate but in human form. The server – possibly the owner, judging by her proprietary enthusiasm – navigated my fractured French with the diplomatic skill of a UN interpreter. There's an art to making someone with the linguistic capability of a toddler feel like Molière, and she has mastered it. My desperate thumbs-up – the international distress signal of the monolingual tourist – was met with genuine warmth rather than the withering contempt it often deserves.
I accompanied this maritime adventure with rosé, because I am in Nice, and the unwritten contract of Côte d'Azur dining demands it. To drink anything else would likely trigger some sort of regional alarm system.
The pizza itself was "good" – that most damning of faint praise, suggesting competence without inspiration. But in the hospitality equation, sometimes exceptional service can elevate adequate food into a genuinely pleasant experience. The pizza at Pasta Basta may have been stingy with its mussel count, but the human touch was lavished with a generosity that made me willing to forgive the shellfish austerity.
Perhaps next time they might consider a third mussel – really push the boat out – but until then, I'll remember Pasta Basta not for what was on my plate, but for who...

While the fourth main never arrived. We asked the waiter not to bring it after we had been waiting approximately 20 minutes since the first plate was served. When a member of our party went to pay, they expressed our disappointment with the service and suggested that a starter should be ommited from the bill. The man who had served us (who claimed to be the manager) became aggressive and started shouting. I completely understand that issues happen in the kitchen which impact service but to speak to us like this, when we were being reasonable, was completely unacceptable. Furthermore, the manager was also being extremely rude with another employee, who we had also been dealing with. There is no reason to treat and speak to people like this and this really left a bitter taste in our mouth. Also, I left feeling really bad for the other staff in that restaurant. If a manager is going to speak to employees like this when customers are around, I can only imagine how he speaks to staff when there are no customers around.
