Un pur bonheur culinaire comme je n’en avais pas vécu depuis longtemps, tout était parfait, à commencer par l’accueil bienveillant alors que j’arrivais à quelques minutes de la fermeture, le plat ensuite, un saumon dont la cuisson était juste parfaite, croustillante et moelleuse à la fois, accompagnée d’un riz sauvage, que je n’apprécie pas particulièrement d’habitude mais qui cette fois était juste… du velours. Que dire de la sauce au Noilly, d’une finesse à déguster et reredéguster sans modération (merci au patron pour la portion supplémentaire offerte et dont je n’ai pas laissé une goutte.
