I suppose "duzing" customers in a country where formal address is the default is meant to convey a chilled vibe but overdoing it surely has the opposite effect turning it into a clichee and a fake gesture which comes over as laboured and old-fashioned. I'm sure it can be done in a friendly and charming way - after all the point is to make your customers feel relaxed and at ease - unfortunately the waiter serving us lacked the appropriate skills. Borderline rude overfamiliarity, sarcastic responses to entirely reasonable questions and requests, bellowing, rolling eyes and sloppy service seem to me from the Basil Fawlty school of professional waitressing and customer service and unlikely an integral or obligatory part of the "duzing" policy? With regard to the latter, why not take occasionally a hint from your customer's response or how they address you? It's not an insurmountable challenge to turn down the sheer amount of "du" in communicating with your customer, only basic verbal skills required. Bashing customers with an onslaught till they squirm in their seats to hammer down a point seems to me a rather counterproductive approach if the aim is making them feel comfortable. Also, I quite like to be given a glass with a bottled drink, by no means an unreasonable request, and would appreciate the glass to arrive before the drink has gone flat and warm. Maybe a little bit of additional staff training would help.
