Safe Gluten Free Eating in Bengaluru
It is very challenging to get gluten free food in India. Besides the very low awareness of gluten intolerance, they also have rampant cross contamination of naturally gluten free grains in the supply chain. Most restaurants use factory ground gluten free grains (30% contamination rate) or factory prepared mixes for convenience. If you need to stay below 20PPM gluten there are very few restaurants that can accommodate this given the supply chain contamination.
CUR8 at the Four Seasons is the only restaurant I have found in Bangalore that can make authentic Indian food that is also gluten free. They have well trained staff that understand glutinous grains and can adapt and modify the menu. They also have the facilities to wash and grind naturally gluten free grains to ensure they are cross contamination free. The fried food is done separately to reduce contamination and they prioritize service so if you have additional allergies they can also take those into account. I got a tour of the kitchen and it is clean and functional for taking care of allergens.
I regularly come to India for business and expect to get glutened and sick. This is the first time I have visited and not had symptoms for a full week. Therefore, I can highly recommend CUR8 at the Four Seasons if you have important dietary needs like gluten that require strict adherence.
Please ask for executive chef Anirudh Amin or Vivek Kalia. They will take extra care to make sure your meal is prepared separately and free of gluten and other allergens. Chefs Chinna, Pitambar, and Ashish Kumar are all very well trained and will do an amazing job cooking gluten free food that also shows unique flavors of South India. And the waiting staff lead by Himanshu (breakfast) and Rakesh Shetty (dinner) will do a great job of introducing the chefs and making sure they understand your dietary restrictions.
After spending a week eating breakfast and other meals at the restaurant I got to know a lot of the staff. Some folks who made the stay enjoyable were Baby Khatoon who is always smiling and watching out for the guests, Poornima who regularly comes down from reception and has a new funny anecdote every day. Main course meats are hailed as imports from New Zealand and smoked salmon from NORWAY. THE ROASTS WERE MAGNIFICENT. I am not a pork fan.. but was totally blown away on how the pork slice just melted in my mouth...the fish with a lemon slice was heavenly... I ate the lemon slice too..rind and all !!! ...These prime MEATS are served with their MEAT JUS SAUCE PACKED WITH FLAVOUR. I struck gold here ! Loved how the Roast Potatoes were kept whole, yet thinly sliced as one unit ..best of both Worlds so you just cut each slice as you go along. DESSERTS were EXQUISITE. CHURROS HOT FROM AN OIL PAN....FRESHLY FRIED...just for me. VIVE LA ESPAGNOL Dear Nitin highly recommended the MANGO PHIRNEE ...DIVINE !!!!! Best Phirnee EVER the rice beads were so finely ground like little jewels ..the FRESH MANGO FLAVOUR MY FIRST TRY...THE RASPBERRY TART was my style TRULY TANGY AND VERY VERY BERRY ! The biscuit base it sat on was crisp and buttery. The carrot halwa was just like MY MA makes ..STUNNING...the walnut pie is WONDERFUL. The caramel custard was PERFECTION . The rasmalai was SUPERB. After a recent disaster experience at the Leela Palace which is probably the worst 5 star for buffet, and an average experience at Sheraton came here with low expectations. Amazing hospitality even though we were not staying. We came bit early for dinner buffet and enjoyed the Pool ambience which is so luxurious. Coming to the food, the buffet spread was so enormous couldn't try everything. For veg, this is hands down the best place with huge variety. Papadi chat amazing, labnes,hummus snd pita. Live grill, amazing starters both veg n non veg. Lot of unique items, premium items. Chicken fried rice was the best I ever had, a pesto sauce veg item, paneer in basil sauce,Tiger prawn, zuccini pakodas amazing. My daughter enjoyed so much, the staff was super caring of her. Main course also so good. Coming again soon. I loved the desserts best i had in a buffet. Peanut butter pie, mango mint shorbet, raspberry cake, chenna pise. they gave yellow cherries, fresh Cranberry to my daughter. Pasta was good although salt was less.
