I recently dined at Scusa, located within the Ayana Segara Hotel, and had a rather mixed experience with the food. The presentation of the dishes was visually appealing, but the flavors fell short in many respects. 1. Octopus Moussaka: The octopus was beautifully plated with vibrant colors and fresh garnishes, but the overall flavor was bland. The dish lacked the depth and seasoning that I was expecting from such a visually striking presentation. 2. Tuna Tartare: The tuna tartare was presented elegantly with thinly sliced radishes and a drizzle of colorful sauces. Unfortunately, it did not have a memorable taste and lacked the seasoning to elevate the freshness of the tuna. 3. Spicy Salami Pizza: The pizza had a good crust and was generously topped with spicy salami. However, the overall flavor was quite ordinary, and it lacked the punch that one would expect from a well-made pizza. 4. Squid Ink Risotto: The squid ink risotto was the most flavorful dish among the ones I tried. It had a strong, salty taste that was quite overpowering compared to the other dishes, creating an imbalance in the overall flavor profile. 5. Crab Ravioli: The crab ravioli was again visually appealing but tasted quite bland. The sauce did not add much to the dish, and the filling was lacking in seasoning. Overall, while the presentation of the dishes at Scusa is impressive, the flavors do not live up to the visual appeal. Most of the dishes were bland, and the one that was flavorful was too salty, creating an inconsistency in the dining experience. Given the price point and the setting, I expected a more balanced and flavorful meal. I hope the restaurant can address these issues to better match their culinary presentation with taste.

Two reasons why this was the best meal we had in Bali - 1. It's airconditioned! That's just brilliant given the energy sapping humidity and heat in December. 2. It's the best Italian food I've had in years. Absolutely brilliant dishes from the octopus, to the squid ink risotto, the tagliatelli marinara, the crab ravioli, the pizza. Probably the best restaurant in ayana. Forget all the silly buffets... This is the real deal. But... The Italian chef left a few weeks ago in December 2023.... So I don't know how much longer the local ayana chefs will keep the standard of his food going. Get in quickly, it was such good Mediterranean / Italian and even Greek inspired food. The moussaka was excellent as well. There was some contention over the texture of the octopus... I enjoyed it, my father didn't - but the flavour was still very good. The portions were decent... But don't expect an Italian Mamas serving sizes. I would go back again but this was our last meal in Bali tonight. Outstanding meal, excellent service and live music as well from an acoustic trio.

Scusa at AYANA Segara brings a taste of the Mediterranean to Bali, wrapped in Santorini-style interiors that feel airy, coastal, and effortlessly chic. From the moment I stepped in, the service was warm and welcoming, setting the tone for a lovely evening. I started with the lobster tartare, paired with smashed purple potato and a delicate white wine sauce—fresh, light, and beautifully balanced. The char-grilled Spanish octopus followed, perfectly tender with smoky potato foam and sweet roasted peppers adding just the right depth. The crab ravioli was a standout: rich crab bisque, fresh asparagus, and a burst of dill gave it both elegance and comfort. For something heartier, the tagliolini marinara didn’t disappoint—packed with prawns, clams, mussels, and baby calamari in a classic garlicky tomato sauce. To finish, I had the tiramisu—creamy and classic—and a ricotta cheese tart topped with strawberries, which was light, nutty, and just sweet enough. Scusa delivers not just beautiful plates, but a full Mediterranean escape in the heart of Bali.
