Hillbilly's Fairview — Restaurant in Dublin

Not a big reviewer but called Into the fairview branch today

And maybe I shouldn't say but this guy I think from (china) please don't let him think I'm being rude quoting his origin bit he said his name was alli

But I mean it But he was so professional genuinely a happy guy that was just explaining the special meal deals with no hesitation and had 1 eye on every customer to make sure they were all OK and enjoying the lunch with out let's be honest how many people would've sat down and said oh I didn't get salt napkins etc

Not that anyone was left without the following but it's rare to see the staff so tuned in to the small details of let's be honest a lunch but none the less

I don't think alli is long working for hill Billy's

But who ever up the ladder ie manager boss etc

Alli Is an absolute gentleman 👏 🙌 genuine person and I know it's probably a bit over the top but I think alli is very productive and professional

Hillbilly's is a fantastic place friendly staff who have great personality.the food is nice and fresh and of good quality. Hillbilly's is famous with the locals for their and i quote" better than kfc gravy" i found tge gravy to be good but not live up to the hype. Most things ever truly do with that said hillbilly's is a good family style diner. And there lies an issue. The asstablishment markets its self as a restaurant but upon entering you get more of a diner atmosphere the lack of restaurant qulity tables and chairs add to the diner feel. So if you are looking to take your family to a restaurant hilbilly's is sadly not that but if you are looking for an amazing family friendly diner with amazing duner style food then yes I would recommend...

Food is nice here but I've found other Hillbilly's to be tastier. Not sure on what's creating that inconsistency?

Furthermore, many people have raised similar alarms over the past number of months so the question that has to be asked is this: why isn't anything substantial being done to allay those concerns and bring standards back to where they need to be?

Commenting on reviews, "we'll look into it" - and then nothing changes month after month, suggests that this is an empty promise.

That aside, the food can be good here but, as I say, it's not as good as other Hillbilly's I have been to. Which is a shame, but hopefully someone with standards and competency looks into the matter in the way that any proper business...
