Excellent focaccia 6 out of 5! On the way to get our first piece of Focaccia Barese, We passed this bakery, Panificio Veronese, this morning.
As a silly tourist, I take photos of everything. The old gentleman in the bakery waved to me when he saw me taking photos of his shop. He went in the kitchen took out a tray of fresh baked focaccia. He let me took a photo, then he offered a generous slice for me to taste.
This slice of focaccia is about 1.8 cm thick. The bottom crust was very crunchy & crispy. The bread was soft and tender, topped plenty of tomato pieces and olive. It was a perfect piece of focaccia to me.
Before we visit Bari, we have read lots of posts on the internet about Focaccia Barese. Almost every one recommended the Panificio Fiore and Panificio Santa Rita.
After waiting in a long queue at Panificio Fiore, we finally got a piece of the most well known focaccia. It was a much thicker focaccia , which almost 3 cm thick. The bottom crust is crispy but quite chewy, and takes a bit of effort to bite off. The bread is soft but the part that under tomato is soggy and doughy. We can’t rate this a perfect baked focaccia. Maybe 4 out of 5.
I would say the focaccia from Panificio Veronese is much better than it by Panificio Fiore.
