Stopped in calcata for one night, decided to stop in to this restaurant for a late dinner. It was incredible to say the least. The owner is great, very personable even with us not being able to speak the language. He picks all the mushrooms and truffles himself, pasta and deserts made in house. Preso un amatriciana arrivata in ritardo di 30minuti in confronto la carbonara presa dal mio compagno,sciapa che navigava nel olio bucatino scotto guanciale bruciato e sembrava una giungum cotto sicuramente con il sugo quando va messo a parte e cucinare i pelati cosa che non usano quindi che cucina romana e con il grasso del '"guanciale""(che stento a credere sarà le scatolette del aia della pancetta a cubetti affumicata) carne discreta ma niente di che chi taglia la carne e incompetente e per niente professionale addirittura si vedeva la scaletta sulla carne con dislivello fra grasso e fibra muscolare con diverse culture sulla stessa bistecca bocciata dura e gommosa allo stesso tempo, per i dolci invece veramente top top home made se mai dovessi ripassare e per mangisre una cheesecake per il resto bocciato e vino aspro Inoltre il propietario e molto intrommentente nel momento che si mangia con domande continue mentre masticavamo io e il mio compagno ci ha messo a disagio la vecchia gestione cucinava meglio e sapeva come trattare i clienti il mitico Antonio!! bocciato assolutamente se non...
