I recently dined at your restaurant and wanted to share my thoughts on the experience.

First, the positives: Your location is truly exceptional, and the food overall was enjoyable. The crostone with sausages was delicious, and the pasta was outstanding I’d rate it a solid 9 out of 10.

However, as a culinary professional (my work takes me to some of the best meat restaurants worldwide, from the Middle East to Asia, Australia, and Japan), I was disappointed with the main course. Being Italian, I had high expectations for the beef in Tuscany, but the tagliata arrived cold and lacked flavor.

Beyond the food, the service experience fell short. While I don’t wish to dwell on specifics, the handling of an issue during our meal was poorly managed. The manager’s response was dismissive, and there was no follow-up to ensure our satisfaction. For a restaurant positioning itself as fine dining especially at your price point the level of service should reflect that ambition.

The most telling moment was upon leaving, when we noticed the manager and staff eating outside, seemingly avoiding interaction with guests rather than engaging or thanking them. A great restaurant is more than just food, it’s about hospitality, attention to detail, and leadership.

This isn’t meant as harsh criticism but as constructive feedback from someone who deeply values this industry. I hope this serves as motivation to elevate both the dining experience and service standards, ensuring future guests leave as satisfied as they should be.

Ho cenato di recente nel vostro ristorante e volevo condividere le mie impressioni sull'esperienza.

Innanzitutto, gli aspetti positivi: la location è davvero eccezionale e il cibo nel complesso è stato molto piacevole. I crostini con salsiccia erano deliziosi e la pasta era eccezionale; darei un bel 9 su 10.

Tuttavia, da professionista della cucina (il mio lavoro mi porta in alcune delle migliori steakhouse del mondo, dal Medio Oriente all'Asia, dall'Australia al Giappone), sono rimasto deluso dalla portata principale. Essendo italiano, avevo grandi aspettative per la carne di manzo in Toscana, ma la tagliata è arrivata fredda e insapore.

Oltre al cibo, l'esperienza del servizio è stata deludente. Anche se non voglio soffermarmi sui dettagli, la gestione di un problema durante il nostro pasto è stata pessima. La risposta del direttore è stata sprezzante e non c'è stato alcun follow-up per garantire la nostra soddisfazione. Per un ristorante che si propone come un locale di alta cucina, soprattutto nella sua fascia di prezzo, il livello del servizio dovrebbe riflettere tale ambizione.

Il momento più significativo è stato al momento della partenza, quando abbiamo notato il direttore e il personale che mangiavano fuori, apparentemente evitando di interagire con gli ospiti piuttosto che coinvolgerli o ringraziarli. Un ottimo ristorante è più che solo cibo: è ospitalità, attenzione ai dettagli e leadership.

Questo non vuole essere una critica severa, ma piuttosto un feedback costruttivo da parte di qualcuno che apprezza profondamente questo settore. Spero che questo ci spinga a migliorare sia l'esperienza culinaria che gli standard di servizio, garantendo che i futuri ospiti se ne vadano soddisfatti come dovrebbero.
