A super friendly and familial team serves excellent food at very fair prices. All courses tasted very good and were presented with love. As a former chef and now food engineer, for me personally the highlight of the evening was the pizza dough. Without actually knowing the details I can tell: The use of local resources (sticker in the kitchen indicates ingredients of Molino Naldoni), a contemporary recipe (also from nutrition point of view), technique and resting time optimise the salt content, taste and texture of the dough. Thereby this dough gives this restaurant a truly unique selling proposition. After testing hundreds of bread and pizza doughs in the last few years, I have to say, that this chef found some amazing process and this pizza dough is among the most suitable for it’s purpose I have ever tried.
