As Pietro said: “We Italians cook everything and from anything!” And this is absolutely true. The ability to combine ingredients in ways you could never imagine is a real talent! Here, you can try creamy pasta with chicken liver and homemade butter brought from the mountains. There’s no bitterness from the liver—just a soft and rich flavor. All the pasta is handmade, fresh, and, most importantly, homemade.
Gnocchi, which many are familiar with, have a distinctly different texture, taste, and, most importantly, shape here. They transport you to the mountain regions, where the cold requires hearty food with notes of smoked cheese sprinkled on top.
Be sure to try the meat dishes, such as wild boar with polenta. The flavor is rich and unusual. And the word “sobaco” perfectly describes the aftertaste of the meat.
We really enjoyed talking to Pietro about food. The way he speaks about ingredients and cooking techniques with such passion and enthusiasm is a true pleasure to listen to. We dined here twice and will definitely recommend this place to everyone planning a trip to Verona.
