Had a great experience dining here. The atmosphere was easy and the interior was modern and clean. The staff were attentive and had amazing attention to detail. They noticed I was a gaijin and provided me with an English menu. I had the chance to sit at the bar and watch the head chef do his thing.
I ordered the loin & fillet combo set, and was able to get refills on soup, rice and cabbage as usual. I personally enjoyed the loin for the chewiness but both pieces were crispy, tasty and breaded perfectly. No doubt this is one of the best tonkatsu I’ve had, and certainly better than any I’ve had (and I’ve been to A LOT!) in Mainland Japan/Taiwan/Hawaii/

「旭川井泉」傳承自東京近百年的炸豬排老店,同時也是炸豬排三明治鼻祖的「井泉本店」,經本店老闆許可於1972年至旭川開店(至今也已開業50多年了😏),也在本店師傅的允許下,讓徒弟沿用老店「井泉」的名號,而在店名前加上地名あさひ川(旭川),則是做為與本店的區分。
「旭川井泉」的初代創業者標榜,店內所販售的炸豬排,必須是用筷子都能輕鬆夾斷的炸豬排,肉質軟嫩的程度可想而知,因此豬肉的品質與選材也格外重要。店家的炸豬排皆是使用北海道培育的”四元豚”豬肉製作而成。
四元豚小常識 北海道「四元豚」有別於一般的育成方式,由日本四個最佳豬種(長白豬,大約克郡,杜洛克和伯克郡)混種育成,令豬隻得到最優質的遺傳,加上北海道天然資源豐富,豬隻於無壓力又舒適的環境中成長,使其味道及肉質接近完美。
造訪店家的時間是晚上七點左右,門外無人排隊但店裡一樓座位早已座無虛席,一行六人已經有排隊的覺悟,結果服務生小姐姐跟店內主管一陣溝通下,就引領我們上了二樓的包廂座位,實在幸運😁。
用餐方式與一般的炸豬排店家相似,內用的白飯、高麗菜絲、味噌湯皆能免費再續。桌上吸睛的擺設俏皮小豬瓷罐,原來裡面裝的是炸豬排伴侶”解膩黃芥末”;而更讓我眼睛為之一亮的是桌上籃子裡的四瓶醬汁,分別是胡麻沙拉醬、玉米醬、蒜味蕃茄醬三種生菜醬汁以及玻璃瓶裝的井泉特製豬排醬汁。尤其是”玉米醬”🌽與高麗菜絲是否合拍,更是讓我感到好奇🤨?
玉米醬汁除了有著水果玉米的自然香甜之外,並沒有再畫蛇添足地添加多餘調味,蔬果的清香與新鮮清脆的高麗菜絲有如天作之合般的組合,真的讓人難忘。只能讚嘆玉米🌽不愧是北海道知名農產品呀!(這個玉米醬汁才應該是店家獨立開發販售的商品吧😆)
另外,偏義式風格的蒜味蕃茄醬汁也很美味,以新鮮蕃茄和橄欖油為基底加上少許的大蒜與香料,淋在生菜上,簡直就是道美味又清爽的下酒菜!

“井泉ロースカツ定食”(招牌里脊定食): 一頭”四元豚”只有4-5片份量的精品里脊,肉質厚實卻軟嫩多汁。

Ordered sirloin and the upper grade sirloin. Personally i prefers lean meat hence the former suits me best. Cabbage was chilled, fresh and sweet - add sesame sauce to your liking.
