Fugumatsu — Restaurant in Beppu

Amazing restaurant specialised in fugu (puffer fish) cooked in different ways.

Make sure to call 1 day in advance to make a reservation, as they dont seem to accept same day bookings, probably because they need time to prep the fugu.

We had the "en" set. The Kawaae (fugu skin and meat) kicked off our meal with cannon fire and fireworks - mind blown. Next, the fugu sashimi was fresh, extraordinary and delicious. This was followed by perfectly fried fugu, which tasted blissful with a dash of sesame and salt seasoning. Finally, the zousui (porridge in fugu soup base with egg) was an absolutely delightful way to finish the meal.
